Almond Croissant Meets Coffee Cake: A Vegan Twist on a Classic Indulgence

Its delicate, flaky layers, infused with a luxurious frangipane filling and often a dusting of powdered sugar, offer an unparalleled indulgence. Here at The Banana Diaries, we are passionate about transforming beloved classics into accessible, dairy-free, and entirely plant-based delights. Our culinary journey has previously led us to create a popular series of dairy-free cream cheese swirled coffee cakes, including fan favorites like the vibrant Vegan Lemon Blueberry Coffee Cake and the playful Vegan Chocolate Chip Cookie Coffee Cake. Given our love for these two distinct yet equally comforting treats, it was only a matter of time before these passions converged to create something truly special: a **Vegan Almond Coffee Cake** that captures the magic of an almond croissant within the comforting embrace of a classic coffee cake.

This recipe isn’t just an iteration; it’s a celebration of flavor and texture, meticulously crafted to ensure it delivers on every front. We aimed for a dessert that doesn’t just meet expectations but spectacularly exceeds them, offering a delightful interplay of tastes and sensations in every single bite. The result is a coffee cake that feels both familiar and exciting, a testament to how incredible plant-based baking can be. A Symphony of Flavors and Textures: The Layers of Our Vegan Almond Coffee Cake

What makes this **Vegan Almond Coffee Cake with Cream Cheese Filling** truly stand out is its thoughtful layering of distinct, yet harmoniously blended, components. Each element plays a crucial role in creating an unforgettable sensory experience:

  • The Foundation: Soft & Moist Vanilla Cake Base: Our signature one-bowl vanilla coffee cake batter forms the moist and incredibly tender base of this dessert. It’s subtly sweet, wonderfully fragrant with vanilla, and provides the perfect sturdy yet delicate canvas for the rich fillings and crunchy topping. The “buttery” texture is expertly achieved using high-quality vegan butter and a carefully balanced ratio of wet and dry ingredients, ensuring a crumb that is consistently moist and never dry. This cake base alone is a delight, but it truly shines when paired with the layers above.
  • The Heart: Silky Dairy-Free “Cream Cheese” Swirl: A luxurious ribbon of dairy-free cream cheese filling is artfully rippled throughout the cake. This layer adds a delightful tang and creamy counterpoint to the sweetness of the frangipane and streusel, reminiscent of traditional cream cheese coffee cakes but without any animal products. It’s surprisingly simple to make, requiring just a few staple ingredients like room temperature vegan cream cheese, a touch of sugar, cornstarch for stability, and vanilla extract for depth. This creamy layer ensures every bite is balanced and utterly satisfying.
  • The Star: Rich, Nutty Frangipane Layer: Emulating the iconic almond croissant, a generous layer of homemade frangipane is delicately spread over the cream cheese filling. Made primarily with almond flour, vegan butter, and a touch of vanilla, this rich, paste-like filling infuses the cake with a deep, authentic almond flavor. While almond extract is optional, we find that the almond flour itself provides ample, naturally robust almond notes. This frangipane is key to achieving that classic almond croissant essence.
  • The Crown: Crunchy Almond Vanilla Streusel Topping: No coffee cake is complete without a compelling crumble, and ours is truly exceptional. A sweet vanilla streusel, generously studded with crunchy sliced almonds, bakes into a golden-brown, slightly crisp topping. This streusel isn’t just for texture; it cleverly incorporates a portion of the frangipane, intensifying the almond notes and adding another layer of “buttery” sweetness. It perfectly complements the moist cake and creamy fillings below, providing that essential satisfying crunch with every bite.

Each forkful of this **Dairy-Free Almond Coffee Cake** offers a dynamic experience: the soft cake, the creamy tang of the “cream cheese,” the rich, sweet almond frangipane, and the satisfying crunch of the streusel. This isn’t just a dessert; it’s an experience, perfect for making any occasion feel a little more special. Dust it with powdered sugar for an elegant presentation, and serve it as a show-stopping holiday breakfast, a delightful brunch centerpiece, or an unforgettable after-dinner treat with a cup of your favorite brew.

Customize Your Coffee Cake: Frequently Asked Questions

We understand that bakers love to personalize their creations. Here are answers to some common questions and potential variations for your **Vegan Almond Coffee Cake**:

Can I omit the cream cheese filling?

Absolutely! If you prefer a more traditional coffee cake profile without the tangy cream cheese, you can certainly skip this layer. For a delightful alternative, consider incorporating a classic cinnamon-sugar swirl in its place, similar to the one found in our popular traditional vegan coffee cake recipe. To do this, simply mix 1/2 cup granulated sugar with 2 teaspoons of cinnamon and sprinkle it over the first layer of cake batter before adding the frangipane. Omitting the cream cheese may also slightly reduce the overall baking time by about 10-15 minutes, so keep a close eye on your oven around the 55-60 minute mark. Always ensure a toothpick inserted into the center comes out clean before removing from the oven.

Can I make this almond coffee cake gluten-free?

Yes, absolutely! Achieving a gluten-free version of this **Vegan Almond Coffee Cake** is simple with the right ingredients. We highly recommend using a high-quality 1:1 gluten-free all-purpose flour blend that specifically contains xanthan gum. This is crucial for replicating the tender, moist texture of a cake made with traditional wheat flour, as xanthan gum provides the necessary structure that gluten would typically offer. Simply swap the all-purpose flour in the recipe for your chosen gluten-free blend in equal measure. Our personal favorite is King Arthur Measure for Measure gluten-free flour, which consistently delivers excellent results in a 1:1 ratio for both US cup and metric measurements. Please note that using only almond flour for the cake batter (as a substitute for all-purpose flour) will not yield the desired results; a properly blended gluten-free all-purpose flour is essential for the structure and texture of the cake base.

Baking Tips for a Flawless Vegan Almond Coffee Cake

To ensure your **Vegan Almond Coffee Cake** turns out perfectly every time, achieving that coveted moist crumb and flavorful layers, keep these expert tips in mind:

  • Room Temperature Ingredients are Key: For all components – especially the vegan butter and cream cheese for the fillings, and the buttermilk for the cake batter – ensure they are at true room temperature. This allows for smoother mixing, better emulsification, and results in a more uniform texture and a higher, lighter crumb in your final cake. Cold ingredients can lead to a lumpy batter and a denser cake.
  • Do Not Overmix the Batter: When preparing the cake batter, mix just until the dry ingredients are fully incorporated with the wet. Overmixing can develop gluten (even in gluten-free blends with xanthan gum) and lead to a tougher, less tender cake. A few small lumps are perfectly fine and will bake out.
  • Proper Springform Pan Preparation: Greasing and lining your 9-inch springform pan with parchment paper is absolutely crucial. This prevents any sticking, especially with the rich fillings, and makes for effortless removal of the cake, preserving its beautiful layered structure.
  • Trust the Long Bake Time: Don’t be alarmed by the longer bake time (75-77 minutes). This coffee cake is dense with multiple moist layers of batter and filling, requiring more time to cook through completely without drying out. Resist the urge to open the oven door too frequently. Trust the toothpick test: insert it into the very center of the cake; if it comes out clean (or with moist crumbs attached, but no wet batter), your cake is ready.
  • Allow for Adequate Cooling: Allowing the **Almond Coffee Cake** to cool completely in its pan for the recommended hour (or even longer) is essential for it to set properly. This significantly makes it easier to slice cleanly without crumbling. Resist the urge to cut into it too soon, as the fillings need time to firm up.
  • Homemade Vegan Buttermilk: If you don’t have store-bought vegan buttermilk on hand, it’s incredibly easy to make your own. Simply combine your preferred dairy-free milk (such as almond or soy milk, preferably unsweetened) with a tablespoon of apple cider vinegar or lemon juice. Stir gently and let it sit for 5-10 minutes until it slightly curdles. This acidity reacts with the baking soda to create a beautifully tender crumb.

Storage and Serving Suggestions for Your Vegan Almond Coffee Cake

This **Vegan Almond Coffee Cake** is absolutely best enjoyed fresh, but it also stores beautifully, allowing you to savor its deliciousness for days:

  • Storage: Store leftover coffee cake in an airtight container at room temperature for up to 3 days. For longer freshness, transfer it to the refrigerator where it will keep well for up to 5 days. Ensure it is always covered tightly to prevent it from drying out.
  • Reheating: If refrigerating, you can gently warm individual slices in the microwave for 15-30 seconds to restore its tender, moist texture. Alternatively, a toaster oven can be used for a few minutes for a slightly crisper streusel topping.
  • Serving: A generous dusting of powdered sugar adds a touch of elegance and extra sweetness, making it picture-perfect. Serve this magnificent cake alongside your morning coffee, a comforting cup of tea, or as a delightful dessert after any meal. For an extra indulgent treat, serve it warm with a scoop of your favorite vegan vanilla ice cream or a dollop of dairy-free whipped cream. Its versatility makes it suitable for any occasion, from a casual family breakfast to a festive holiday brunch.

Ingredients

Frangipane filling:

  • 1/2 cup (112 g) unsalted vegan butter, melted
  • 3/4 cup (150 g) granulated sugar
  • 1 1/2 cups (150 g) almond flour
  • 1/2 tsp sea salt
  • 1/4 cup + 2 tbsp all purpose flour*
  • 3 tbsp almond milk
  • 2 tsp vanilla extract OR 2 tsp almond extract

Almond crumble:

  • 1 cup (125 g) all purpose flour*
  • 1/2 cup (100 g) granulated sugar
  • 5 tbsp (70 g) unsalted vegan butter, melted and cooled to room temperature
  • 1 tsp vanilla extract
  • 1/8 tsp sea salt
  • 1/3 of the frangipane
  • 1/2 cup sliced almonds

Cream cheese filling:

  • 8 ounces vegan cream cheese, room temperature
  • 1 tbsp brown sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract

Cake batter:

  • 2/3 cup (180 g) vegan buttermilk, room temperature
  • 1/2 cup (113 g) vegan unsalted butter
  • 1 1/4 cup (250 g) granulated sugar
  • 3/4 cup (170 g) dairy free sour cream or dairy free yogurt, room temperature
  • 1 tbsp vanilla extract or vanilla paste
  • 1/4 tsp sea salt
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 3 cups (375 g) all-purpose flour

Instructions

  1. Prep: Preheat the oven to 350F (175°C). Line a 9-inch springform pan with parchment paper and grease the rims of the pan.
  2. Make the frangipane: In a small bowl, combine all frangipane ingredients and mix with a fork until a smooth, paste-like texture is achieved. Set aside.
  3. Make the crumble: In a medium bowl, mix together the all-purpose flour, granulated sugar, melted vegan butter, vanilla extract, and sea salt for the crumble. Rub the ingredients with your fingers until you achieve a sand-like texture. Incorporate 1/3 of the prepared frangipane into the crumble, rubbing it in until evenly distributed. Set aside; sliced almonds will be added later.
  4. Prepare cream cheese filling: In another medium bowl, use a hand mixer to cream together the vegan cream cheese, brown sugar, cornstarch, and vanilla extract until fluffy and well combined (about 1-2 minutes). Set aside.
  5. Prepare cake batter: Ensure your vegan buttermilk is ready. In a large bowl, whisk together the vegan butter, granulated sugar, dairy-free yogurt (or sour cream), and vanilla extract until well combined. In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and sea salt. Gradually add the dry ingredients to the wet ingredients, alternating with the vegan buttermilk, mixing gently until just combined. Be careful not to overmix.
  6. Assemble the coffee cake: Pour half of the vanilla coffee cake batter into the prepared springform pan and spread it evenly to the edges. Next, spoon the cream cheese filling on top and use an offset spatula to spread it gently to the edges. Carefully spread the remaining frangipane over the cream cheese layer. Spoon the rest of the vanilla coffee cake batter on top, spreading it to cover the frangipane. Finally, sprinkle the prepared almond crumble evenly over the top of the batter, then scatter the sliced almonds over the crumble.
  7. Bake: Place the springform pan in the preheated oven and bake for 75-77 minutes. The cake is ready when a toothpick inserted into the center comes out clean and the crumble topping is lightly golden brown.
  8. Cool: Allow the coffee cake to cool completely in its pan for at least 1 hour before attempting to remove it.
  9. Serve: Once cooled, carefully release the sides of the springform pan. Dust the top generously with powdered sugar for a beautiful finish. Slice, serve, and enjoy your homemade vegan almond coffee cake!

Notes

Flour: For a gluten-free version, replace the all-purpose flour with a 1:1 gluten-free flour blend that contains xanthan gum. King Arthur Measure for Measure gluten-free flour is an excellent choice for this recipe, ensuring a soft and moist crumb.
