  • 3 1/2 cups gluten free 1-to-1 baking flour with 1 tbsp arrowroot starch (this helps the grittiness in the flour- you can also use all purpose flour or cake flour if you’re not gluten free)
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 tsp nutmeg
  • 1 tsp baking soda
  • 1 cup granulated sugar
  • 1/2 cup vegan butter 
  • 1/2 cup unsweetened applesauce
  • 1/4 cup dairy free yogurt
  • 1 tbsp vanilla extract or 1/4 tsp vanilla powder

Vegan Buttercream Frosting:

  • 1 cup vegan butter, softened
  • 4 cups powdered sugar
  • 1 tsp ground nutmeg
  • 1 tsp ground cinnamon
  • 1 tsp vanilla extract.

  2. Prep: Preheat the oven to 350F (175°C) and generously grease three 8-inch cake pans or 6-inch cake pans with olive or coconut oil. Line the bottoms with parchment paper for easy release and set them aside. In a small bowl, combine the vegan eggnog and apple cider vinegar; stir gently and set aside to curdle slightly.   3.
