Unveiling the Delicious Layers of This Vegan Easter Masterpiece

Crafting this epic Easter egg nest cake is an exciting culinary adventure, and each component plays a vital role in its irresistible charm and flavor profile. We’ve meticulously chosen ingredients to ensure a truly decadent and satisfying vegan experience, all while keeping the holiday spirit alive with vibrant decorations.

  • Rich and Decadent Vegan Chocolate Coconut Cake: The foundation of our Easter creation is a moist, dairy-free chocolate coconut cake. Unlike many vegan cakes that can sometimes lack richness, this recipe is packed with real coconut flakes and uses full-fat coconut milk to deliver an unbelievably tender crumb and a deep, luxurious chocolate flavor that perfectly complements the subtle tropical notes of coconut. It’s a cake that truly tastes like celebration in every bite!
  • Luscious Dairy-Free Cream Cheese Frosting: What’s a cake without an exquisite frosting? Our decadent dairy-free cream cheese frosting is the perfect counterpart to the rich chocolate cake. It’s wonderfully tangy, sweet, and incredibly smooth, providing a creamy contrast that elevates the entire dessert. This frosting is robust enough to hold the decorative elements while remaining light and airy.
  • Crunchy Chocolate-Coated Toasted Coconut Flakes: Instead of traditional shredded wheat, we’ve opted for a more flavorful and textural delight: toasted coconut flakes generously coated in melted vegan chocolate. This not only adds an incredible crunch and depth of flavor but also creates the most authentic-looking “nest” for your Easter eggs. The combination of toasted coconut and chocolate is simply divine.
  • Festive Vegan Chocolate Eggs and Homemade Cadbury Creme Eggs: The crowning glory of our Easter nest cake! We adorn the nest with an array of store-bought vegan chocolate eggs and, for an extra special touch, our very own homemade vegan Cadbury Creme Eggs. These are shockingly simple to make and taste just like the classic, but without any dairy or eggs. They pair perfectly with other holiday treats like our no-bake Easter egg cheesecake for an ultimate Easter dessert spread.

Navigating the World of Vegan Easter Candies: Sweet Choices for Your Celebration

While the cake itself is undoubtedly the star, the decorations on top truly bring the Easter magic to life. Finding suitable vegan holiday candies can sometimes be a challenge, as many traditional Easter treats, like popular Cadbury chocolates, unfortunately contain dairy and eggs. However, the good news is that the market for delicious plant-based alternatives is growing rapidly, offering a delightful array of options for your vegan Easter Nest Cake.

For this particular cake, we utilized a combination of both readily available store-bought options and a simple homemade treat. The charming pastel-colored coated eggs featured on our cake are from Doisy & Dam, a fantastic British company renowned for its ethical and delicious vegan chocolates. While they are based in the UK, their products can often be found internationally. For those in the US, you might not be able to order directly from their website, but retailers like Holland & Barrett are excellent sources for acquiring these delightful treats. Always check your local specialty stores or online vegan retailers for availability.

A delectable slice of our vegan Easter cake, showcasing its rich texture and festive topping.

A true highlight for our cake were the homemade vegan Cadbury Creme Eggs. Don’t be intimidated; they are surprisingly simple to whip up, and the creamy, sweet filling truly captures the essence of the classic, making them an incredible addition to your Easter display. They provide that nostalgic touch without any animal products.

Beyond these specific choices, the world of vegan Easter candy continues to expand. Here are a few more fantastic options to consider when decorating your nest cake or filling your Easter baskets:

  • Moo-Free Chocolate Easter Bunnies and Eggs: This brand offers a wonderful selection of dairy-free chocolate figures perfect for Easter. Their range includes various shapes and sizes, often available in different flavors.
  • No Whey Easter Chocolates: Known for their allergen-friendly products, No Whey Foods provides a diverse collection of Easter-themed chocolates, from bunnies to eggs, all free from common allergens including dairy, nuts, soy, and gluten.
  • Vegan Jelly Beans: While not chocolate, many brands of jelly beans are naturally vegan (just be sure to check for gelatin). They can add a wonderful burst of color and fruity flavor to your Easter cake.
  • Dark Chocolate Mini Eggs: Many dark chocolate varieties are accidentally vegan. Look for brands that clearly state “dairy-free” or check the ingredient list for milk products. Companies specializing in vegan chocolates also often offer mini egg versions.

When selecting store-bought vegan candies, always remember to carefully read the ingredient labels to ensure they align with your dietary needs. With a little searching, you’ll find a treasure trove of delicious and cruelty-free options to make your Easter celebration extra special.

Step-by-Step Guide: How to Assemble Your Show-Stopping Vegan Easter Egg Nest Cake

Creating this stunning Easter nest cake might appear complex at first glance, but I promise it’s quite straightforward and incredibly rewarding – a truly fun project for any baker! Fair warning: it can get a little messy, so have a clean workspace, fresh hands, and a towel ready for those inevitable chocolate-covered fingers. Follow these detailed steps to assemble your gorgeous chocolate coconut Easter cake:

  1. Prepare Your Vegan Chocolate Coconut Cake Layers: The journey begins with the cake itself. This recipe builds upon my tried-and-true best vegan chocolate cake recipe, with a delightful Easter twist. This time, we infuse it with the tropical essence of full-fat coconut milk and generous flakes of real coconut, adding an extra layer of flavor and moisture. You have the flexibility to make this cake using either a stand mixer equipped with a paddle attachment for ease, or a large bowl and a hand mixer for a more hands-on approach. The recipe works beautifully for either an 8-inch three-layer cake, which will give you wider, slightly shorter layers, or a 6-inch three-layer cake for a taller, more dramatic presentation. Whichever size you choose, ensure your cake pans are properly greased and floured, or lined with parchment paper, to prevent sticking.
  2. Achieve Perfect Cake Cooling: This step is absolutely critical for successful cake assembly. Once your cake layers are baked to perfection, it is imperative that you allow them to cool completely on a wire rack. Attempting to frost or stack warm cake layers will result in melted frosting, crumbling cakes, and a very frustrating experience. Patience here is truly a virtue; aim for at least 45 minutes to an hour, or until the cakes are cool to the touch. You can even bake them ahead of time and store them wrapped at room temperature until ready to assemble.
  3. Whip Up the Creamy Vegan Cream Cheese Frosting: While your cakes are cooling, prepare the star frosting. In a large mixing bowl, simply cream together softened vegan butter and softened vegan cream cheese until light and fluffy. This usually takes about 2-3 minutes on medium speed. Gradually add in sifted powdered sugar, mixing until it’s fully incorporated and the frosting reaches a smooth, spreadable consistency. If it’s too thick, add a tiny splash of dairy-free milk; if too thin, add a bit more powdered sugar. Scrape down the sides of the bowl often to ensure everything is evenly mixed.
  4. Frost the Cake Layers with Care: Once your cake layers are completely cool, it’s time to assemble and frost. Place your first cake layer on your serving plate or cake stand. Apply a generous, even layer of the cream cheese frosting, spreading it gently to the edges. Repeat this process with the second layer. Place the third layer on top, then use the remaining frosting to apply a full, even coat around the entire cake – top and sides. Aim for a smooth finish, as this will be the canvas for your chocolate coconut nest. For best results, place the frosted cake in the refrigerator for about 15-20 minutes to allow the frosting to firm up slightly. This creates a stable surface for the next step.
  5. Adorn with Chocolate-Coated Coconut Flakes: This is where the “nest” truly comes to life! First, gently toss your toasted coconut flakes with melted vegan chocolate. Ensure the chocolate has cooled down a bit after melting (it should not be hot), otherwise, it will melt your carefully chilled frosting. Remove the cake from the fridge. Now for the fun, messy part: gently press the chocolate-coated coconut flakes against the sides and top of the cake, building up the “nest” effect. Don’t be shy; cover the entire cake! For easier cleanup, I highly recommend placing a piece of parchment paper or aluminum foil underneath your cake stand or plate before you start this step. Once fully coated, place the cake back into the refrigerator for another 10-15 minutes to allow the chocolate and frosting to set.
  6. Decorate Your Vegan Easter Nest Cake! With the chocolate coconut nest firmly set, it’s time for the final, most exciting step: decorating! This is your chance to unleash your creativity. Arrange your vegan chocolate Easter eggs, homemade vegan candy eggs, vegan Cadbury Creme Eggs, or even colorful vegan jelly beans directly into the “nest” on top of the cake. You can create a simple scattered look or arrange them to form a more cohesive pattern. Once decorated, your magnificent Vegan Chocolate Coconut Easter Egg Nest Cake is ready to be admired, sliced, and thoroughly enjoyed!

Creative Cake Variations to Suit Every Taste

While this Chocolate Coconut Easter Egg Nest Cake is absolutely perfect as is, part of the joy of baking comes from customization! Here are some delightful variations you can try to tailor this festive dessert to your personal preferences or what you have on hand:

  • Experiment with Different Vegan Chocolate Types: If dark chocolate isn’t your preferred choice for coating the toasted coconut, feel free to swap it out! You can use a creamy vegan milk chocolate (brands like Pascha Organics offer fantastic options) for a sweeter, milder flavor. For an even more unique and visually striking “nest,” consider using vegan white chocolate – you could even tint it with natural food coloring for a vibrant touch!
  • Transform it into a Pure Coconut Dream: Love coconut even more than chocolate? No problem! Instead of a chocolate coconut cake base, you can easily adapt this recipe to use my dedicated vegan coconut cake recipe as the foundation. You’ll still get that incredible moist texture and rich coconut flavor, which will be wonderfully complemented by the cream cheese frosting and chocolate-coated coconut nest.
  • Get Creative with Decorations Beyond Eggs: While vegan candy eggs are the classic choice for an Easter nest, don’t limit your imagination! You could make homemade chocolate molded Easter eggs and fill them with colorful vegan sprinkles for a fun surprise inside. Consider adding small edible flowers, vegan chocolate bunnies, or even tiny marzipan carrots for a rustic garden-nest look. Fresh berries, like raspberries or blueberries, can also add a pop of color and freshness.
  • Add a Lemon Twist: For a brighter, more zesty flavor profile, consider adding lemon zest to both the cake batter and the cream cheese frosting. A lemon-infused chocolate coconut cake would be a refreshing departure from the classic and perfectly suited for spring.
  • Spice it Up: A pinch of cinnamon or cardamom in the cake batter could add a warm, inviting spice note that pairs beautifully with both chocolate and coconut, giving your Easter cake an exotic twist.

Description

This chocolate coconut Easter egg cake is the most adorable cake for your vegan Easter celebration! With a rich chocolate coconut cake, cream cheese frosting, and chocolate coated coconut, this Easter cake is decorated to be an easter basket and is so much fun to make!

Ingredients

Scale

Chocolate Coconut Cake:

  • 1 cup (240 mL) full fat coconut milk*, room temperature
  • 2 tsp apple cider vinegar
  • 3 1/4 cups (400 g) all purpose flour or gluten free 1:1 baking flour, sifted
  • 1/2 cup (60 g) all natural cocoa powder
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/8 tsp sea salt
  • 1 1/4 cups (250 g) granulated sugar
  • 2/3 cup (11 tbsp or 155 g) unsalted vegan butter*, room temperature
  • 3/4 cup (190 g) unsweetened applesauce, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup (120 mL) hot water + 1 tsp dissolvable espresso powder (or 1/2 cup brewed coffee, decaf if desired)
  • 1 cup (95 g) toasted coconut flakes

Vegan Cream Cheese Frosting:

  • 2 cups vegan butter, softened
  • 45 cups powdered sugar, sifted
  • 1 cup vegan cream cheese

Decorations:

  • 4 cups toasted coconut flakes
  • 1 cup melted vegan chocolate, room temperature
  • Vegan candy eggs (see notes) for decoration

Instructions

  1. Before you begin, ensure you read all instructions thoroughly and measure out every ingredient for the cake. This prep work guarantees a smooth baking process.
  2. Preparation Steps: Preheat your oven to 350°F (175°C). Prepare three 6-inch cake pans by greasing their bottoms and sides, then lining the bottoms with parchment paper. If you prefer, three 8-inch cake pans can be used, but note that the baking time will be slightly reduced. Set the pans aside. Next, prepare the vegan buttermilk: in a small bowl, combine the full-fat coconut milk and apple cider vinegar. Let this mixture sit for 5-7 minutes to allow it to curdle. While coconut milk won’t curdle as visibly as soy or almond milk, the vinegar will still react, activating the baking soda in the recipe.
  3. Craft the Cake Batter: In a medium bowl, whisk together the dry ingredients: flour, cocoa powder, baking powder, baking soda, and sea salt. Set this aside. In the bowl of a stand mixer fitted with a paddle attachment (or using a large bowl and a hand mixer), cream the softened vegan butter and granulated sugar until the mixture is light and fluffy, typically 2-3 minutes. Remember to scrape down the sides and bottom of the bowl as needed to ensure even mixing. Incorporate the applesauce and vanilla extract, mixing on medium speed until well combined. Gradually add about half of the dry flour mixture to the wet ingredients, followed by half of the vegan buttermilk. Mix on medium speed just until the flour begins to combine. Then, add the remaining flour mixture and buttermilk, mixing only until no dry streaks of flour remain. Slowly pour in the hot coffee (or hot water with espresso powder) and the toasted coconut flakes, mixing on medium speed just until the coffee and coconut are fully incorporated into the batter. Be careful not to overmix.
  4. Bake the Cakes to Perfection: Divide the prepared cake batter evenly among the three cake pans. Carefully place the pans into the preheated oven and bake for 26-28 minutes. The cakes are done when a toothpick inserted into the center comes out clean. If you opted for three 8-inch cake pans, your cakes will likely bake a bit faster, so start checking for doneness around 20-22 minutes. Once baked, remove the cakes from the oven and allow them to cool in their pans for a full 10 minutes. After this initial cooling, carefully invert them onto a wire rack to cool completely. This crucial step usually takes about 45 minutes to an hour; ensure they are fully cooled before proceeding to frosting.
  5. Prepare the Dreamy Cream Cheese Frosting: Once your cake layers are nearly cool, you can prepare the frosting. In a large mixing bowl, beat the softened vegan butter and vegan cream cheese together until smooth and creamy, which should take approximately 3 minutes. Gradually sift in the powdered sugar, continuing to beat until you achieve a light, fluffy frosting consistency. If the frosting seems too thick, add a very small amount of dairy-free milk (such as oat or almond milk) one teaspoon at a time until the desired consistency is reached. If it’s too thin, add more sifted powdered sugar.
  6. Frost and Chill the Cake: Place the first cooled cake layer onto your chosen cake plate or serving stand. Spoon about 1 cup of frosting onto the top and spread it evenly to the edges. Carefully place the second cake layer on top and repeat the frosting process. Crown with the third cake layer, then use the remaining frosting to apply a full, even coat around the entire cake, covering both the top and sides. Aim for a smooth finish. For the best results, transfer the frosted cake to the refrigerator for about 15-20 minutes. This chilling time allows the buttercream frosting to firm up, creating a stable surface for the chocolate-coated coconut.
  7. Create the Chocolate Coconut Nest: While the cake is chilling, melt your vegan chocolate (dark, milk, or white chocolate, as preferred). Ensure the melted chocolate has cooled slightly to room temperature; it should not be hot, as hot chocolate will melt your firm frosting. In a bowl, toss the toasted coconut flakes evenly with the cooled melted chocolate. Remove the cake from the refrigerator.
  8. Decorate and Set the Cake: This step can be a bit messy, but it’s incredibly fun! Gently press the chocolate-coated coconut flakes onto the frosted cake, covering the entire surface to create the look of a bird’s nest. Be thorough and build up the texture. Once the cake is fully coated, carefully place it back into the fridge for another 5-10 minutes to allow the chocolate to set firmly. Finally, arrange your chosen vegan candy eggs (Doisy & Dam, homemade Cadbury Creme Eggs, or other options) on top of the cake within the coconut nest. Your festive and delicious cake is now ready to be sliced and enjoyed!
  9. Storage Instructions: To keep any leftover cake fresh, store it covered at room temperature for up to 2 days. For longer preservation, slice the cake and store the individual slices in an airtight container in the refrigerator for up to 5 days. For optimal texture, allow refrigerated slices to come to room temperature for about 15-20 minutes before serving.

Notes

Understanding Vegan Buttermilk with Coconut Milk: While full-fat coconut milk won’t visibly curdle as dramatically as soy milk or almond milk when combined with apple cider vinegar, the chemical reaction still occurs. The acidity from the vinegar interacts with the baking soda in the recipe, creating the leavening effect necessary for a light and fluffy cake. For more details on this process, refer to my post on how to make vegan buttermilk.

Gluten-Free Adaptation: To make this cake gluten-free, substitute the all-purpose flour with a high-quality gluten-free 1:1 baking flour blend. I highly recommend using Bob’s Red Mill 1:1 Baking Flour (the one in the blue bag) for best results. Please note, I do NOT recommend using Namaste Foods GF flour for this particular recipe, as it may yield a different texture.

Vegan Candy Egg Choices: For the decorations, I used a delightful combination of store-bought Doisy & Dam vegan candy-coated chocolate eggs and my incredibly easy homemade vegan Cadbury Creme Eggs. As mentioned in the main post, there are many other fantastic vegan Easter candy options available, both in specialty stores and online, to suit your preference and accessibility.

Butter and Cream Cheese Tips: Ensure both your vegan butter and vegan cream cheese are at room temperature for the frosting. This is crucial for achieving a smooth, lump-free, and perfectly creamy consistency. If they are too cold, your frosting will be lumpy and difficult to spread.
