  • 1/2 cup (100 g) granulated sugar
  • 2 tsp vanilla extract 
  • 1 tbsp (15 g) vegan yogurt or vegan sour cream
  • 1 3/4 cup (230 g) all purpose flour or gluten free 1:1 baking flour*
  • 1 tbsp cornstarch 
  • 1 tsp ground cinnamon
  • 1/2 tsp ground ginger
  • 1/2 tsp ground nutmeg
  • 1/4 tsp ground allspice
  • 1/4 tsp ground cardamom
  • 1/4 tsp ground cloves
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda

Vegan Butterscotch Sauce:

  • 1/2 cup (113 g) vegan butter, melted
  • 1/2 cup (113 g) cashew butter
  • 1/2 cup (120 mL) maple syrup
  • 1 tbsp vanilla extract
  • 1 pinch sea salt

Vegan Cream Cheese Frosting:

  • 1 batch vegan cream cheese frosting

Sorting Hats:

  • 6 vegan chocolate cream sandwiches*
  • 12 vegan sugar cones*
  • 1 cup vegan dark chocolate, melted 
  • Supplies:
    • 12 toothpicks
    • Styrofoam or cardboard box, to dry the sorting hats


Instructions

  1. Preparation Phase: Gather all your ingredients for the cupcakes and measure them out. Preheat your oven to 350°F (175°C) and line a 12-cup cupcake tin with paper liners. Ensure your vegan buttermilk is prepared (mix dairy-free milk with a tablespoon of apple cider vinegar or lemon juice and let it sit for 5 minutes).
  2. Craft the Cupcake Batter: In a spacious mixing bowl, whisk together the melted and cooled vegan butter, brown sugar, granulated sugar, vanilla extract, and vegan yogurt until well combined. Gradually add the all-purpose flour (or gluten-free 1:1 baking flour), cornstarch, and all the warm chai spices (cinnamon, ginger, nutmeg, allspice, cardamom, cloves), baking powder, and baking soda. Pour in the vegan buttermilk and continue to whisk just until the wet and dry ingredients are fully incorporated. Be careful not to overmix; a few lumps are perfectly fine.
  3. Fill and Bake: Carefully spoon the cupcake batter into the prepared cupcake liners, filling each approximately three-quarters of the way full to allow for a beautiful dome. Bake for 25-27 minutes, or until a toothpick inserted into the center of a cupcake comes out clean. Once baked, remove the cupcakes from the oven and let them cool in the muffin tin for about 10 minutes.
  4. Cool Down: After the initial cooling period in the tin, transfer the cupcakes to a wire cooling rack to cool completely. This prevents them from becoming soggy and ensures they’re ready for frosting.
  5. Whip Up the Butterscotch Filling: While your cupcakes are cooling, prepare the indulgent butterscotch sauce.     1. Begin by carefully twisting apart 6 vegan chocolate cream sandwich cookies, removing the filling to yield 12 chocolate cookie bases for your hats. Next, take your 12 vegan sugar cones. Gently score about an inch from the pointed tip of each cone and carefully use a sharp knife to slice off this top portion. (You can save the wider parts of the cones for other snacks!).
    2. Divide the reserved 1 cup of cream cheese frosting into four small bowls, approximately 1/4 cup of frosting per bowl. Mix vegan red, yellow, green, and blue food coloring into each bowl, creating your vibrant Hogwarts house colors.
    3. Pipe the red frosting into the tip of three of your mini sugar cones. Then, gently press the wider cut end of each frosting-filled cone onto one of the chocolate cookie bases, creating the base of your sorting hat. Repeat this process for the remaining colors, making three hats of each house color.
    4. Place the assembled sorting hats onto a plate and transfer them to the freezer for 15-20 minutes to firm up the frosting. While they are chilling, melt your vegan dark chocolate (ensure it’s smooth and dip-ready) and prepare your drying station with styrofoam or cardboard, creating small holes to hold the toothpicks upright.
    5. Once the hats are frozen and firm, take one hat and carefully insert a toothpick through the center of its cookie base. Dip the sorting hat into the melted chocolate, twirling it gently to ensure a smooth, even coating. Immediately place the skewered sorting hat into your prepared styrofoam or cardboard to dry completely. Repeat this for all the hats.
    6. For a quick set, place the styrofoam or cardboard with the dipped sorting hats into the freezer for another 5-10 minutes. Once the chocolate is fully set and hard, your magnificent Sorting Hats are ready for the cupcakes! Remove the remaining frosting from the fridge and, if needed, beat it again briefly with a hand mixer or stand mixer to restore its fluffy texture.
  8. Fill the Cupcakes: Using a cupcake corer or a small spoon, carefully carve out a small hole (about 1/2 inch deep) from the center of each cooled cupcake. Fill each cored cupcake with approximately 1 tablespoon of the delectable vegan butterscotch sauce.
  9. Pipe the Frosting: Transfer the remaining vegan cream cheese frosting into a piping bag fitted with your desired piping tip. Pipe a generous swirl of frosting onto the top of each filled cupcake, creating a perfect bed for the sorting hat.
