Essential Ingredients & Versatile Substitutions for Your Vegan Cinnamon Sugar Donuts

What truly sets these baked vegan cinnamon sugar donuts apart is how they achieve such a decadent and heavenly taste using surprisingly simple, wholesome ingredients. We believe that deliciousness shouldn’t come at the cost of dietary needs, which is why we’ve also tested and verified several ingredient substitutions to ensure these donuts are easily customizable for nearly any preference.

For these exquisite vegan donuts, you’ll primarily need:

  • Flour: You have the flexibility to make these either simply healthier baked vegan cinnamon sugar donuts or truly gluten-free vegan cinnamon donuts. For a gluten-free version, we highly recommend Bob’s Red Mill Gluten Free 1:1 Baking Flour (recognizable by its blue bag). It’s crucial to note that this blend is distinct from Bob’s Red Mill Gluten Free All-Purpose Baking Flour (found in a red bag), as the 1:1 blend is specifically formulated for recipes that call for regular flour without additional modifications, ensuring perfect texture and rise. For those not needing gluten-free, standard all-purpose flour works beautifully.
  • Ground Cinnamon: This is the star spice, providing that signature warmth and sweetness. For an extra touch of autumnal flair, you can effortlessly substitute an equal amount of your favorite pumpkin spice blend, creating a wonderful seasonal variation.
  • Nutmeg: This seemingly small addition is literally the key ingredient that transforms homemade donuts into tasting like they’ve just come from a professional bakery. Its subtle, warm, and slightly sweet aroma provides depth and complexity that elevates the entire flavor profile. Do not skip it!
  • Coconut Sugar: We opt for coconut sugar to make these donuts naturally refined sugar-free. Its caramel-like notes complement the cinnamon beautifully. Alternatively, you can use organic granulated sugar if you don’t require a refined sugar-free option, or even a mix of both. If using granulated sugar and adhering to a vegan diet, please ensure that the sugar is certified vegan, as some brands process sugar with bone char.
  • Vegan Butter: This provides richness and a tender crumb to the donuts. For a substitute, coconut oil can be used. If you prefer to minimize any coconut flavor, opt for triple-refined coconut oil, which has a more neutral taste.
  • Dairy-Free Milk with Apple Cider Vinegar (ACV): This combination is essential for creating homemade vegan buttermilk. This “buttermilk” reacts with the leavening agents in the recipe, creating a light, fluffy, and cakey texture, which is particularly vital for gluten-free vegan donuts. You can use various dairy-free milks such as soy milk, almond milk, oat milk, or even full-fat coconut milk for added richness.
  • Unsweetened Applesauce: This ingredient acts as a natural binder and adds moisture, contributing to the donuts’ soft texture while keeping them lighter.
  • Vanilla Extract: A splash of vanilla enhances all the other flavors, adding a comforting depth.
  • Baking Soda & Baking Powder: These leavening agents work in harmony with the vegan buttermilk to give the donuts their perfect rise and airy texture.

For the essential cinnamon sugar coating, you’ll simply need:

  • Cinnamon: An abundant amount, of course, for that classic cinnamon flavor.
  • Coconut Sugar: Or organic granulated sugar, for a beautifully classic appearance and satisfying crunch.
  • Vegan Butter: Or coconut oil, melted, to help the cinnamon sugar adhere perfectly to each donut.

Easy enough, right? Now that we’ve covered the ingredients, let’s explore the best tools for baking these scrumptious gluten-free cinnamon sugar donuts!

Choosing the Best Donut Pan for Perfect Results

The type of donut pan you use can slightly influence the final appearance and texture of your baked vegan donuts. We’ve successfully made these delicious treats using both a larger silicone mold (as prominently featured in our photos) and more traditional, smaller metal donut pans.

If you opt for the smaller metal donut pans, you’ll generally yield more donuts per batch, and they tend to brown a bit better around the edges. This browning can give them a slightly crispier exterior that beautifully mimics the “fried” look and texture, despite being baked. These are excellent for smaller, bite-sized treats or for serving a crowd.

However, if you prefer larger, more substantial donuts that feel extra indulgent, a silicone mold is your best bet. Silicone pans are fantastic for easy release and create beautifully shaped donuts every time. Whichever you choose, ensure it’s well-greased before filling to guarantee a smooth removal process.

Effortless Guide: How to Make Baked Vegan Cinnamon Sugar Donuts

For precise ingredient measurements and a comprehensive recipe card, please scroll to the bottom of this post. Here, we provide a clear, step-by-step overview to guide you through the process, along with visual cues to ensure your success.

As we’ve highlighted, these baked vegan donuts are incredibly simple to prepare. With just about 10 minutes of active prep time and an additional 22-26 minutes in the oven, you’ll have a batch of irresistibly delicious cinnamon sugar donuts ready to enjoy in record time.

To begin crafting these delightful vegan cinnamon sugar donuts, first, prepare the donut batter:

  1. Combine Dry Ingredients: In a medium-sized bowl, thoroughly whisk together your gluten-free or all-purpose flour, coconut sugar, ground cinnamon, nutmeg, baking powder, and baking soda. Pay special attention to the nutmeg; this small addition is crucial for imparting that distinct “bakery” flavor, so don’t be tempted to omit it. Setting aside the dry mixture ensures even distribution of all components.
  2. Whisk Wet Ingredients: In a separate, larger bowl, combine your prepared vegan buttermilk (dairy-free milk mixed with apple cider vinegar), unsweetened applesauce, melted vegan butter, and vanilla extract. Whisk these wet ingredients until they are smooth and well-incorporated, creating a consistent base for your batter.
  3. Combine Wet and Dry: Gently add the whisked dry ingredients into the bowl containing the wet ingredients. Using a whisk or spatula, mix until the flour mixture is just incorporated. It’s vital not to over-mix the batter, even with gluten-free flour, as overworking can lead to a denser, tougher donut. A few small lumps are perfectly fine.
  4. Fill the Donut Pan: For the easiest and cleanest way to fill your donut molds, spoon the batter into a piping bag or a large plastic freezer bag. Once the bag is filled, simply snip off one corner with scissors. Carefully pipe the batter into each donut cavity, filling them approximately three-quarters of the way full. This allows room for the donuts to rise beautifully without overflowing.
  5. Bake the Vegan Donuts: Transfer your filled donut pan to the preheated oven. Bake for 22 to 26 minutes, or until a toothpick inserted into the center of a donut comes out clean. Once baked, remove the pan from the oven and allow the donuts to cool directly in the pan for about 10 minutes. This resting period helps them firm up and prevents them from breaking when transferred. Afterward, gently transfer the donuts to a wire cooling rack to cool completely.

Next, let’s prepare the irresistible cinnamon sugar coating!

This final step is wonderfully straightforward and adds that iconic, comforting finish. Once your donuts have cooled on the rack for about 15 minutes (they should still be slightly warm but not hot), you’ll:

Brush both the tops and bottoms of the donuts generously with melted vegan butter using a pastry brush. Immediately after brushing, dip each donut, one at a time, into a bowl containing the whisked cinnamon and sugar mixture. Ensure they are evenly coated on all sides. Place the coated donuts back onto the cooling rack to allow the butter and sugar to set slightly, enhancing the adherence and creating a perfect finish.

Pro Tips & Tricks for Mastering Baked Vegan Donuts

  • Make These Vegan Cinnamon Sugar Donuts Oil-Free: For an even lighter option, you can easily adapt this recipe to be oil-free. Simply swap the melted vegan butter in the donut batter with an equal amount of unsweetened applesauce. For the cinnamon sugar coating, immediately after removing the donuts from the oven and allowing them to cool in the pan for 10 minutes, skip the melted butter and directly dip them into the cinnamon sugar mixture. The residual warmth and moisture will help the coating stick.
  • Embrace Fall Flavors with Pumpkin Spice: To create an even more pronounced autumn-flavored vegan donut, replace the ground cinnamon with an equal amount of a homemade or store-bought pumpkin pie spice blend. Do this for both the donut batter and the cinnamon sugar coating. This simple swap introduces a delightful medley of ginger, cloves, and allspice, perfect for the season.
  • No Donut Pan? Make Vegan Cinnamon Sugar Muffins Instead: Don’t let the lack of a donut pan deter you! This versatile batter can be easily transformed into baked vegan cinnamon sugar muffins. Simply prepare the batter as instructed, then line a standard muffin tin with cupcake liners. Fill each liner about two-thirds full with the batter and bake according to package directions, typically 18-22 minutes, or until a toothpick comes out clean. For the topping, brush the warm muffin tops with melted vegan butter (or directly dip if oil-free, as above) and then into the cinnamon sugar mixture.
  • The Importance of Vegan Buttermilk: This step is frequently overlooked but absolutely critical for the success of these donuts. Mixing dairy-free milk with apple cider vinegar creates an acidic environment. This acidity then reacts with the baking soda and baking powder in the recipe, producing carbon dioxide bubbles. These bubbles are what give the donuts their incredible lightness and fluffiness without the need for yeast, resulting in a perfectly cakey texture. Don’t skip this simple but powerful chemical reaction!
  • Ensure Room Temperature Ingredients: For optimal mixing and consistency, ensure your liquid ingredients like vegan buttermilk, applesauce, and melted vegan butter (if not hot) are at room temperature. This helps prevent the batter from becoming lumpy or curdling, especially when combining wet and dry ingredients.
  • Proper Storage for Freshness: These baked vegan donuts are best enjoyed fresh. However, any leftovers can be stored in an airtight container at room temperature for up to 2 days, or in the refrigerator for up to 5 days. For longer storage, you can freeze them for up to 2 months. To reheat, simply microwave for a few seconds or warm gently in a toaster oven for that freshly baked taste.

Ingredients

Scale

Cinnamon Sugar Donuts:

  • 1/2 cup (120 mL) vegan buttermilk
  • 1 1/2 cups (160 g) gluten free flour blend or regular all purpose flour
  • 1/2 cup (100 g) brown sugar or coconut sugar
  • 1/3 cup (83 g) unsweetened applesauce, room temperature
  • 1/3 cup (66 g) vegan butter, melted
  • 2 tsp vanilla extract
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1/2 tsp nutmeg
  • 3 tsp cinnamon

Cinnamon Sugar Coating:

  • 1/2 cup (100 g) granulated sugar or coconut sugar
  • 2 tbsp cinnamon
  • 1/2 cup (115 g) vegan butter or coconut oil, melted

Instructions

  1. Make sure to read through all instructions before beginning.
  2. Prep: Preheat the oven to 350F and grease a large 4-hole donut pan* with olive, coconut, or avocado oil. Mix together the dairy-free milk and apple cider vinegar to create vegan buttermilk. Measure out all ingredients.
  3. Make the donut batter: In a medium bowl, whisk together the flour, cinnamon, nutmeg, baking powder, and baking soda. Set aside. In a large bowl, whisk together the vegan buttermilk, coconut sugar, applesauce, melted vegan butter, and vanilla until smooth. Add in the dry ingredients, and whisk together until the flour mixture is just incorporated into the wet. Do not over-mix.
  4. Fill the donut pan: Scoop the batter into a piping bag or large plastic bag. Cut the end tip with scissors and pipe the batter into each donut cavity, filling the hole about 3/4 of the way up. With a large donut pan, you’ll yield 5 donuts; with two medium donut pans, you’ll yield 10-12.
  5. Bake the donuts: Bake in the oven for 22-26 minutes or until a toothpick inserted comes out clean. Remove from the oven and allow the donuts to cool in their pan for 10 minutes. Then transfer to a cooling rack to finish cooling for 15 minutes before dipping into cinnamon sugar.
  6. Prep the cinnamon sugar coating: Melt the vegan butter for dipping. In a separate bowl, whisk together the cinnamon and coconut sugar.
  7. Coat the cinnamon sugar donuts: Brush each donut with melted vegan butter using a pastry brush, coating both the top and bottom. Dip the donuts one at a time into the cinnamon sugar bowl, and flip to evenly coat. Place back onto a cooling rack to allow the butter to set for 10 minutes.
  8. Serve and enjoy! Store any leftovers in an airtight container in the fridge for up to 5 days or in the freezer for up to 2 months.

Notes

Donut pan: You can use a large silicone donut pan, which will yield approximately 5 donuts in total, or two smaller 6-donut metal pans, which will yield 10-12 donuts.
