What Exactly Is German Chocolate Cake?

A common misconception, and one that often surprises people, is that German Chocolate Cake is not actually German in origin. Its name is derived from an American baker named Samuel German, who was credited with inventing this delicious confection in 1852 in the United States. While the name might suggest European roots, this beloved dessert is distinctly American.

I delve into this topic and other fun facts in my cookbook, but it’s a detail worth clarifying to avoid confusion. So, rest assured, while its name is “German,” its heritage is purely American!

Traditionally, German chocolate cake features a moist, often one-bowl chocolate cake base layered with a sticky, sweet coconut-pecan custard filling. This filling is typically made with evaporated milk and eggs, giving it a rich, custardy texture. Our mission, therefore, was to create a truly authentic-tasting vegan version by cleverly substituting these dairy and egg components without sacrificing flavor or texture. And spoiler alert: we’ve succeeded! The result is a truly remarkable chocolate cake with a filling that captures all the indulgent essence of the original, but without any animal products.

And for those with dietary restrictions, this delightful chocolate coconut pecan cake can also be effortlessly made gluten-free, ensuring everyone can enjoy a slice of this heavenly dessert!

Essential Ingredients for Your Vegan German Chocolate Cake

Crafting the perfect vegan German chocolate cake relies on a few key ingredients that deliver authentic flavor and texture. Here’s a closer look at what you’ll need and why:

  • Flour: For our base, we utilize all-purpose flour, which provides a tender crumb. However, if you’re aiming for a gluten-free option, a good quality 1:1 gluten-free baking flour blend, such as Bob’s Red Mill in the blue bag, works wonderfully. When using gluten-free flour, always rely on cup measurements rather than weight, as it can weigh differently than standard all-purpose flour, impacting the final consistency.
  • Cocoa Powder: The choice of cocoa powder is crucial for deep chocolate flavor and proper cake rise. Always use all-natural cocoa powder, not cacao powder. While cacao is packed with antioxidants, it lacks the necessary acidity to react with baking soda, which is essential for our cakes to rise beautifully and achieve that airy texture. Cocoa powder, on the other hand, contains the perfect amount of acidity to create this vital chemical reaction.
  • Vegan Butter: This plant-based essential plays a dual role in our recipe, contributing richness to both the moist chocolate cake and the lusciously sticky coconut pecan frosting. For superior results, we highly recommend using Miyoko’s Kitchen Cultured Vegan Butter. Its rich flavor and creamy texture make it an ideal substitute for traditional dairy butter.
  • Vegan Buttermilk: A homemade vegan buttermilk is simple to create and vital for tender, moist vegan cakes. It’s a combination of your favorite dairy-free milk (such as soy milk or almond milk) mixed with apple cider vinegar. This mixture curdles slightly, mimicking traditional buttermilk and contributing to the cake’s light texture and delicate tang.
  • Hot Coffee: Unlike many baking recipes that call for room temperature ingredients, hot liquid is a secret weapon here. Adding hot coffee (or hot water with espresso powder) helps to “bloom” the cocoa powder, intensifying its chocolate flavor and creating a deeper, richer taste profile in the cake. You can use decaf if preferred.
  • Dairy-Free Yogurt: For added moisture and tenderness, we incorporate dairy-free yogurt into the cake batter. Unsweetened applesauce can also be used as an equally effective substitute, offering a similar moisture boost without altering the flavor significantly.
  • Sweetened Condensed Coconut Milk: This magical ingredient is the star of our vegan coconut pecan frosting. It creates that wonderfully sticky, caramel-like base that perfectly encapsulates the traditional custard texture, providing an incredible depth of flavor and sweetness without any dairy.
  • Pecans: To ensure every slice is perfect and easy to manage, we recommend finely chopping your raw pecans. This prevents large, awkward pieces that can make slicing challenging and ensures an even distribution of nutty flavor throughout the filling.
  • Coconut Shreds: We suggest using unsweetened coconut flakes and then blitzing them lightly to create finer shreds. While you can buy sweetened shredded coconut, we’ve found it often makes the frosting overly sweet. Using unsweetened allows you to control the sugar balance more effectively. For an even more profound coconut flavor, lightly toast your coconut flakes before adding them to the filling.

Overview: Crafting Your Vegan German Chocolate Cake, Step-by-Step

You’ll be delighted by how straightforward and simple this vegan layer cake is to create. One of the best parts? The chocolate cake itself requires only one bowl – no need for a stand mixer or a hand mixer! Here’s a quick overview of the process:

To start your baking adventure:

1. Prepare the Chocolate Cake Batter: Begin by whisking together all the wet ingredients in a large bowl. Once smooth, gradually sift in the dry ingredients. Remember to add the homemade vegan buttermilk and hot coffee last, ensuring the cocoa powder blooms beautifully and the cake achieves its perfect texture.

2. Bake the Cake Layers: Carefully divide the velvety batter evenly into three 8-inch cake pans. Bake until a toothpick inserted into the center comes out clean, indicating perfectly cooked layers. These will form the foundation of your stunning dessert.

3. Craft the Luscious Coconut Pecan Frosting: While your cake layers are cooling, turn your attention to the star filling. In a saucepan, gently melt the condensed coconut milk and vegan butter over medium heat. Stir in the sugar, continuously whisking until the mixture comes to a gentle boil and begins to thicken, which usually takes just a few minutes. Remove from heat, then stir in the vanilla extract, along with the finely chopped pecans and shredded coconut flakes. This creates the signature sticky, caramel-like filling that defines German chocolate cake.

4. Prepare the Garnishes: While the coconut pecan frosting cools to room temperature, you can efficiently prepare the optional, yet highly recommended, vegan chocolate ganache and a vegan chocolate buttercream. These elements add an extra layer of flavor and visual elegance to your finished cake.

5. Assemble Your Masterpiece: Once all components have cooled completely to room temperature – this is crucial for the cake’s structure and texture – it’s time to assemble your vegan German chocolate cake! Place your first cake layer on a cake stand or serving plate. Spread about one-third of the rich coconut pecan filling evenly over the top. Gently place the second cake layer on top and repeat the frosting process. Finally, top with the third cake layer, spread the luscious chocolate ganache over the top, allowing it to artfully drip down the sides. For a final flourish, pipe decorative swirls of chocolate buttercream on top and adorn with the remaining pecan filling. The result is a truly impressive and delicious dessert that will captivate all who see and taste it!

Expert Tips for a Flawless Vegan German Chocolate Cake

  • Precision in Chopping and Blitzing: To ensure every slice of your cake is elegant and easy to cut, it’s absolutely essential that the pecans and coconut flakes for the filling are properly chopped and, if necessary, lightly blitzed. Larger pieces can make slicing quite challenging and might cause the layers to separate, so aim for a consistent, finer texture.
  • The Golden Rule: Cool Everything Completely Before Assembly: This is arguably the most critical tip for any layer cake, and especially for one with a luscious, sticky filling like this. Ensure that your chocolate cake layers, the coconut pecan frosting, the chocolate ganache, and even the buttercream are all cooled to room temperature, or even slightly chilled, before you begin assembly. Applying warm frosting to cool cakes can cause them to become mushy and compromise the overall structure and texture of your beautiful vegan chocolate cake. For a perfect ganache drip, ensure it’s cooled to a slightly thickened, pourable consistency, but not too warm.
  • Exploring Gluten-Free Alternatives: If you’re looking for another fantastic gluten-free option beyond a 1:1 baking flour blend, consider using our incredible oat flour chocolate cake recipe as the base for this German chocolate cake. It offers a wonderful texture and flavor profile that pairs beautifully with the coconut pecan filling.
  • Storage and Shelf Life: Once assembled, store your vegan German chocolate cake in an airtight container or a cake box in the refrigerator for up to 3 days. For longer storage, individual slices can be wrapped tightly and frozen for up to 3 months. Thaw in the refrigerator overnight before serving for the best texture.
  • Serving Suggestions: While this cake is undeniably a showstopper on its own, it pairs wonderfully with a scoop of dairy-free vanilla ice cream or a dollop of coconut whipped cream for an extra touch of luxury. A dusting of cocoa powder or extra toasted coconut flakes can also enhance its presentation.

Description

This unbelievably vegan German chocolate cake tastes just like the real deal. Rich and decadent easy chocolate cake with layers of sticky coconut pecan filling!

Ingredients

Scale

Chocolate cake:

  • 1 1/4 cup (300 mL) vegan buttermilk, room temperature
  • 3 cups (375 g) all purpose flour or gluten free 1:1 baking flour, sifted
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1/2 tsp sea salt
  • 1 3/4 cups (350 g) granulated sugar
  • 1/3 cup (110 g) brown sugar or coconut sugar
  • 2/3 cup (150 g) unsalted vegan butter*, melted and cooled to room temperature
  • 3/4 cup (170 g) unsweetened applesauce or dairy free yogurt, room temperature
  • 1 cup (95 g) all natural cocoa powder, sifted
  • 1 tsp vanilla extract
  • 1 cup (240 mL) hot water + 1 tsp dissolvable espresso powder (or 1 cup (240 mL) brewed coffee, decaf if desired)

Coconut Pecan Caramel Filling:

  • 14.8 ounces (2 7.4-ounce cans) sweetened condensed coconut milk
  • 1/2 cup (113 g) vegan butter
  • 1 cup (200 g) coconut sugar or granulated organic sugar
  • 2/3 cup (6 ounces) chopped raw pecans
  • 1 1/2 cups (150 g) unsweetened shredded coconut (or coconut flakes that you then shred)
  • 1 tsp vanilla extract
  • 1 batch vegan chocolate ganache
  • 1/2 batch vegan chocolate buttercream

Instructions

  1. Prep: Begin by measuring out all your ingredients for the chocolate cake to ensure a smooth baking process. Prepare three 8-inch cake pans by lightly oiling them and lining the bottoms with parchment paper. Preheat your oven to 350°F (175°C). Ensure your vegan buttermilk is prepared and at room temperature. In a medium bowl, sift together the all-purpose flour (or gluten-free 1:1 baking flour), baking powder, baking soda, and sea salt. Set this dry mixture aside.
  2. Make the Vegan Chocolate Cake Batter: In a large bowl, whisk together the melted and cooled vegan butter, unsweetened applesauce or dairy-free yogurt, brown sugar (or coconut sugar), granulated sugar, and vanilla extract until they are well combined and smooth. Sift in the cocoa powder and whisk again thoroughly until no dry streaks remain and the mixture is uniformly chocolatey.
  3. Incorporate Dry Ingredients and Liquids: Gradually sift the reserved flour mixture into the wet ingredients. As you begin to whisk, pour in the vegan buttermilk. Whisk gently, just until the flour starts to incorporate into the chocolate mixture. Finally, add the hot coffee (or hot water with espresso powder) and continue whisking until the flour is JUST combined and you have a smooth, rich batter. Be careful not to overmix, as this can lead to a tough cake.
  4. Bake the Cakes: Evenly divide the chocolate cake batter among the three prepared 8-inch cake pans. Place the cake pans into the preheated oven and bake for approximately 30-33 minutes, or until a wooden toothpick inserted into the center of a cake comes out clean. Once baked, remove the cakes from the oven and allow them to cool in their pans for about 10 minutes. This helps them firm up before transferring. Then, carefully invert them onto a wire cooling rack to cool completely to room temperature. This step is crucial before frosting to prevent the cake from crumbling or the frosting from melting.
  5. Prepare the Pecan Coconut Filling: While the cake layers are cooling, prepare the signature coconut pecan filling. In a medium saucepan, combine the sweetened condensed coconut milk and vegan butter. Cook over medium heat, stirring occasionally, until the vegan butter is completely melted and the mixture is smooth. Add in the coconut sugar (or granulated organic sugar) and bring the mixture to a gentle boil, continuing to whisk constantly to prevent sticking and ensure even cooking. Reduce the heat to medium-low once boiling, and continue to whisk for another 3-5 minutes, or until the mixture begins to visibly thicken and turn a caramel-like color. Remove the saucepan from the heat. Stir in the vanilla extract, along with the finely chopped pecans and shredded coconut, folding the ingredients into the caramel until they are evenly distributed. Set the filling aside to cool completely to room temperature. It will thicken further as it cools.
  6. Make the Vegan Chocolate Ganache and Buttercream: While the coconut pecan filling is cooling, take this time to prepare your optional, but highly recommended, garnishes. First, prepare the vegan chocolate ganache according to its specific instructions. Then, prepare a half batch of the vegan chocolate buttercream. Allow the ganache to cool until it’s pourable but slightly thickened for a nice drip effect. If your kitchen is particularly warm, you can place the buttercream in the fridge for a few minutes to firm up slightly before bringing it back to room temperature for piping. Ensure all components are at the right consistency and temperature before moving to assembly.
  7. Assemble the German Chocolate Cake: Once all the components – cake layers, coconut pecan filling, chocolate ganache, and buttercream – have cooled completely to room temperature, you are ready to assemble your showstopping vegan German chocolate cake. Place the first cake layer onto your chosen cake stand or serving plate. Apply approximately one-third of the rich coconut pecan filling evenly over the top of this layer, spreading it almost to the edges. Gently place the second cake layer on top and repeat the process with another third of the filling. Finally, place the third and final cake layer on top. Pour the cooled chocolate ganache over the top of the cake, allowing it to gently drip down the sides for an elegant “naked cake” effect. For the ganache to set properly, place the cake into the fridge for 10-15 minutes. After chilling, remove the cake and pipe decorative swirls or rosettes of the vegan chocolate buttercream along the top edge of the cake. Finish by carefully applying the remaining coconut pecan filling in the center of the buttercream border.
  8. Slice and Serve: Your magnificent vegan German chocolate cake is now ready to be enjoyed! Serve it immediately to delighted guests, or store it in an airtight cake box if you need to transport it or serve it later. Any leftover slices should be stored in an airtight container in the fridge for up to 3 days. For longer preservation, individual slices can be wrapped securely and stored in the freezer for up to 3 months. When ready to enjoy from frozen, simply thaw in the refrigerator overnight.

Notes

Gluten-Free Option: For a delicious gluten-free vegan German chocolate cake, please use a high-quality gluten-free 1:1 baking flour blend. When measuring, rely on the provided cup measurements rather than weighing, as gluten-free flours can have different densities. Alternatively, for the chocolate cake component, you can confidently swap in our fantastic oat flour chocolate cake recipe. It provides a wonderful texture and complements the rich coconut pecan filling beautifully.
