  • 1/4 cup Teriyaki sauce
  • 1 tbsp rice vinegar
  • 2 tsp sesame oil
  • 1/2 tsp ground ginger

Bowl Ingredients:

  • 1/2 cup guacamole
  • 1/2 cup hummus
  • 1 cup roasted red peppers
  • 1/2 cup salted pepitas (pumpkin seeds)
  • 1 cup cooked quinoa (or your preferred grain)
  • 2–4 cups lettuces of your choosing
  • 2 limes
  • Optional toppings: crumbled vegan feta, sauerkraut (kraut), or olives

Instructions

  2. Dice the Sweet Potatoes and Onions: Carefully slice the prepped sweet potatoes into uniform 1-inch thick cubes. This ensures even cooking. Next, slice the onion into long, thin strips that will become beautifully crispy when roasted.

Set the marinated tofu aside until the 35-minute vegetable baking time is complete.
  6. Add Tofu and Finish Baking: After the sweet potatoes and onions have baked for 35 minutes, carefully remove the sheet pan from the oven, but keep the oven on. Using a heat-safe spoon or spatula, create some space on the baking sheet for the marinated tofu. Arrange the tofu cubes in a single layer on the cleared section of the pan. Take this opportunity to also toss the sweet potatoes and onions again, ensuring they crisp up evenly on all sides. Return the sheet pan to the oven and continue baking for another 15 minutes, or until the sweet potatoes are fork-tender and slightly caramelized, and the tofu is golden and crispy.
