What Type of Buttercream is Best for Piping Flowers?

The secret to perfectly piped buttercream flowers lies in using the right type of frosting. A “decorator’s buttercream” is typically ideal for this purpose, as it develops a slight crust once exposed to air, which helps the intricate shapes hold beautifully. American buttercream is a fantastic choice for this, known for its stability and ease of coloring. Our vegan American buttercream is a personal favorite and comes highly recommended for achieving those crisp, delicate floral details.

Beyond its structural qualities, buttercream also offers a canvas for flavor experimentation. Consider infusing your frosting with various extracts to complement your cake’s flavor profile. Delicate floral notes like rosewater or orange blossom, a hint of almond for richness, vibrant fruity flavors such as strawberry or raspberry, or a zesty lemon extract can all elevate your floral cake to an unforgettable culinary experience. The possibilities are endless, allowing you to tailor your creation to any palate.

Which Wilton Tips Make Beautiful Flowers?

Wilton offers an extensive array of piping tips designed specifically for creating stunning floral patterns, giving you immense creative freedom. The choice of tip largely depends on the complexity and style of flower you envision for your cake.

For classic and elegant flowers like roses, petal tips are indispensable. We used Wilton tip #103 for the beautiful roses in this tutorial, but tips like #104 or #127 are also excellent for forming realistic petals. These tips have a distinct narrow opening on one side and a wider opening on the other, allowing you to create delicate ruffles and curves with ease. Beyond roses, you can find specialized sets of flower design tips that cater to various blooms, from pansies to hydrangeas.

Don’t limit yourself to just petal tips! Other versatile tips can also be employed for floral accents. A star tip, for instance, can be used to create implied petals, adding texture and volume. You can then fill in the centers of your flowers with small dots using a round tip for an added touch of detail. Furthermore, a leaf tip (such as Wilton tip #352, which we recommend) is crucial for adding realistic greenery, bringing your floral arrangement to life and providing a natural contrast to the blossoms.

How Do You Attach Buttercream Flowers to a Cake?

Attaching your delicate buttercream flowers to the cake is a straightforward process, especially when you leverage the magic of temperature. Once your piped flowers are chilled and firm, carefully pipe a small dot of fresh buttercream onto the back of each flower. This fresh buttercream acts as an adhesive. Gently press the flower onto the desired spot on your chilled cake. The cold temperature of both the flower and the cake’s frosting will cause the fresh dot of buttercream to firm up quickly, securely bonding your beautiful creation to the cake without smudging or sliding. This technique ensures your floral arrangement remains perfectly in place, creating a seamless and professional finish.

Essential Cake Tools I Recommend:

Having the right tools can make all the difference in achieving a professional-looking buttercream flower cake. Here’s a list of essential items to gather before you begin:

  • Cake turntable: An absolute game-changer for smooth frosting and easy cake rotation while decorating.
  • Medium and large offset spatulas: Perfect for spreading buttercream evenly and achieving sharp edges.
  • Wilton cake flower tips: Essential for piping various flower shapes (e.g., petal tips like #103, #104, #127, and a leaf tip like #352).
  • Piping bags or pastry bags: Reusable or disposable bags for holding your buttercream and attaching tips.
  • Cake boards + boxes: Crucial for stability during transport and presenting your finished cake beautifully, especially if it’s a gift.
  • Flower nail: A small, round surface with a stem, designed for piping individual flowers that can then be easily transferred.
  • Squares of parchment paper or pieces of wax paper: Used on the flower nail to pipe individual flowers, allowing them to be frozen and easily removed.
  • Mixing bowls: Several bowls for preparing and coloring different batches of buttercream.
  • Vegan food coloring: Essential for creating a vibrant palette for your flowers. We recommend liquid (not oil-based) vegan food colors or powders for best results.
  • Spoons: For scooping and mixing colors.

Overview: How to Create a Buttercream Flower Cake:

Creating a beautiful floral buttercream cake involves several key stages, from initial planning to final decoration. Here’s a comprehensive overview of how to assemble your masterpiece:

  1. Sketch Your Cake Design: Before you even preheat your oven, visualize your final cake. Sketching out your desired floral arrangement on paper helps immensely. Consider the number of layers, the size (we recommend a three-layer, one-tier 8-inch cake for beginners), and the overall aesthetic. This planning phase also helps you estimate the amount of frosting needed and choose a cohesive color palette for your flowers and cake base.
  2. Bake the Cake: Prepare your chosen cake recipe according to its instructions. This is where patience is key: ensure your cake layers are completely and utterly cool before attempting to frost them. Even a hint of warmth can melt your buttercream, leading to a frustrating mess. Allow at least an hour for cooling, or even longer if needed.
  3. Assemble and Frost the Cake: Once your cake layers are cool, it’s time for assembly. Start by applying a thin “crumb coat” of buttercream. This traps any loose crumbs, ensuring a smooth finish for your final layer. For the crumb coat, use plain vegan buttercream. After the crumb coat sets (a quick chill in the fridge helps), apply your final, thicker layer of buttercream. You can tint this outer layer a complementary color, as we did with pink rose powder, to enhance your floral design.
  4. Chill the Cake: While you focus on piping your delicate flowers, place your assembled and frosted cake into the refrigerator. A cold cake provides a stable surface for attaching the buttercream flowers, preventing melting and ensuring they adhere properly.
  5. Pipe and Freeze the Flowers: This is the most artistic part! Using your chosen piping tips and colored buttercream, pipe individual roses (or pansies, or any flower you desire) onto small squares of parchment paper. To make handling easier, place these piped flowers on a baking sheet and transfer them to the freezer immediately after piping each one. Freeze the flowers for at least 5 minutes. This freezing step is crucial as it allows the buttercream to firm up, making the flowers sturdy enough to be carefully transferred and placed onto the cake without losing their shape.
  6. Reserve Frosting for Finishing Touches: Don’t use all your colored buttercream for the main flowers! Remember to set aside a small amount of green frosting for piping leaves and a bit of plain buttercream to act as an “adhesive” when attaching the frozen flowers to the cake.
  7. Plan Your Pattern and Decorate: Remove your chilled cake from the fridge. Using your pre-planned sketch or a gentle mark on the cake, decide where each flower will be placed. Apply a small dot of reserved buttercream to the back of each frozen flower, then gently press it onto its designated spot on the cake. Once all the main flowers are in place, use your green buttercream and leaf tip to pipe delicate leaves around and between the flowers, bringing your floral arrangement to life. You can also add more small petals or dots to fill any gaps and create a lush, abundant look.
  8. Store and Enjoy!: Once decorated, your buttercream flower cake is ready to be admired and enjoyed. Store it appropriately (usually at room temperature for a short time or in the fridge for longer storage) and share your beautiful creation!

How to Make Buttercream Flowers on the Side of a Cake?

Decorating the sides of your cake with buttercream flowers adds another dimension of elegance and artistry. The method for attaching flowers to the side is remarkably similar to placing them on top, with just a few subtle considerations for stability and aesthetic flow. You’ll continue to rely on the power of cold temperatures to ensure your flowers stay perfectly put.

Begin by piping your chosen floral designs onto parchment paper squares and chilling them thoroughly in the freezer until firm, exactly as you would for top decorations. Once frozen, take a chilled flower and pipe a small dot of fresh buttercream onto its back. Then, with extreme care and gentleness, press the flower onto the side of the chilled cake. The key here is not to apply too much pressure, which could distort the flower or create indents in your cake’s outer frosting. The cold surfaces will quickly bond, holding the flower securely.

To enhance the side decoration, you can pipe additional leaves around each flower once it’s attached. This creates a natural, climbing vine or cascading effect. You can also add smaller filler petals or tiny dots of buttercream in complementary colors to create a more integrated and lush appearance. Practice makes perfect, so don’t be afraid to experiment with different placements and arrangements to achieve your desired side design.

Expert Tips & Tricks for Making a Buttercream Flower Cake:

Achieving a stunning buttercream flower cake is not just about the recipe, but also about mastering a few key techniques and strategies. Here are some expert tips to guide you:

  • Prepare Multiple Bowls for Buttercream: Organization is key when working with multiple colors. If you envision a vibrant display of pink, red, and orange flowers with yellow centers and green leaves, you’ll need at least five separate bowls of frosting. Allocate about 1/2 cup to 3/4 cup of buttercream per color, depending on the size and quantity of flowers you plan to pipe. This prevents cross-contamination and makes the coloring process much smoother.
  • Thoughtfully Plan Your Color Palette: The harmony of your colors can make or break your cake’s aesthetic. Before you begin, spend time considering complementary and tertiary color combinations. Utilize a color palette generator (like Canva’s) to visualize how different hues will interact. A well-chosen palette ensures your cake is visually appealing and cohesive.
  • Maintain a Cold Cake: This tip cannot be overstated! Throughout the decorating process, ensure your cake remains consistently cold. A chilled cake provides a firm foundation, allowing buttercream flowers to adhere securely without melting or sliding. It also helps maintain the cake’s structural integrity, preventing any tilting or shifting, especially with taller or more elaborate designs.
  • Ensure You Have All the Right Tools: Before starting, double-check your toolkit against our recommended list. Having everything prepared and within reach will prevent interruptions and unnecessary stress during the decorating process. From specific piping tips to the flower nail, each tool plays a vital role.
  • Use Room Temperature Frosting for Piping: While the cake needs to be cold, the buttercream you are actively piping should be at room temperature. Frosting that is too cold will be stiff and difficult to pipe smoothly, leading to jagged edges and strained hands. Frosting that is too warm will be too soft and lose its shape. Aim for a creamy, pliable consistency for easy piping, then chill the piped flowers immediately.
  • Adapt This Technique for Various Celebrations: The art of piping buttercream flowers isn’t limited to just one type of event. These skills are incredibly versatile! Apply them to create a breathtaking vegan wedding cake, festive graduation cakes, charming bridal shower cakes, delightful birthday cakes, and many more special occasions. The ability to customize colors and flower types makes this decoration style suitable for virtually any theme.

Transform Buttercream Flowers for Cupcakes!

The beauty of piped buttercream flowers isn’t exclusive to large cakes; they make equally stunning decorations for cupcakes, elevating them from simple treats to miniature works of art. The process is incredibly simple and just as rewarding. To create elegant buttercream flower cupcakes, begin by frosting your cupcakes with a smooth layer of your favorite buttercream. This can be a simple swirl or a flat base, depending on your desired aesthetic.

Once your cupcakes are frosted, carefully take your pre-chilled and firm buttercream flowers (piped and frozen using the same method as for a full-sized cake). Gently place one or more of these beautiful blossoms on top of each cupcake. The chilled nature of the flower will help it settle securely onto the fresh frosting, creating an instant, professional-looking garnish. This technique is not only easy but also allows for endless creativity in combining different flower types, colors, and arrangements on each individual cupcake.

Description

This elegant yet surprisingly easy buttercream flower cake is perfect for all celebrations! Use your favorite cake recipe and pipe buttercream roses and more in this easy tutorial!

Ingredients

  • Your favorite cake recipe (I used my favorite vegan vanilla cake recipe)
  • 2 1/2 batches of vegan buttercream frosting (or your favorite American buttercream frosting)
  • Vegan/plant-based/all-natural food coloring*

Instructions

  1. Bake: Bake your selected cake according to its instructions.
  2. Cool the cake: Ensure the cake is FULLY COOLED before assembling. This will take at least an hour.
  3. Make one batch of buttercream frosting: Prepare one batch of buttercream frosting. This will be used for the crumb coat and outer coating.
  4. Assemble the layer cake: Assemble the layer cake by first applying a crumb coat. Then, you may tint the final coat of buttercream as desired and apply it. You can make an additional 1/2 batch of buttercream here if you want a thick outer coating.
  5. Chill the cake: Place the cake into the fridge to chill while you make the buttercream flowers.
  6. Make the buttercream flowers: Make the additional batch of buttercream and section it off into your various colors. Use about 1/2 cup to 3/4 cup per flower color. If you’re making rose flowers, use a Petal Cake Decorating Tip (e.g., #104 or #127). Place a small pat of buttercream onto the top of your flower nail, along with a square of parchment paper. With the thicker side of the tip facing down and holding the tip almost 90 degrees (closer to 80), pipe a small circle for the inside of the rose. Then, tilting the tip more at an angle (60 to 45 degrees), pipe petals around the initial inside of the rose. Continue until you’ve piped your entire rose. Take the piece of parchment paper and place it onto a baking sheet and into the freezer to chill as you pipe the remaining flowers. Repeat the freezing process. Reserve some frosting for the small dots and leaves.
  7. Assemble the flower buttercream cake: Remove the cake from the fridge. Following your selected cake design, place a dot of reserved frosting onto the back of each frozen buttercream flower, and gently press the flower onto the cake where you’d like it to go. Repeat with the remaining flowers. Finally, pipe leaves using a leaf piping tip (such as Wilton #352) to finish the cake.
  8. Store and enjoy!

Notes

For vegan food coloring: I recommend Nomeca vegan liquid food colors or Suncore foods. Whole Foods 365 also works, but you’ll need to mix colors to achieve your desired shade.
