How to make an American Flag Cake (Vegan!)

As we diligently prepare our collection of delicious vegan Fourth of July recipes, we’re thrilled to share one more extraordinary creation with you this year. This isn’t just any cake; it’s an incredible American Flag Cake, meticulously crafted to be entirely vegan, eggless, and dairy-free, with a convenient option for those seeking a gluten-free version. Imagine slicing into a cake revealing beautifully striped layers of red, white, and blue, each vibrant hue achieved with natural colorings. This vegan Fourth of July dessert is truly a sight to behold and a taste sensation that promises to delight every guest, regardless of their dietary preferences.

A Flavorful Twist on a Classic Fourth of July Dessert

Having previously crafted a traditional American flag layer cake, this year, our aim was to infuse an even greater element of excitement and culinary innovation. Instead of sticking with an all-vanilla vegan American flag cake, we envisioned each vibrant stripe possessing its own distinct and captivating flavor profile. This approach ensures that every bite offers a new and exciting experience, transforming a simple dessert into an adventurous journey for the palate.

For the captivating array of flavors, we chose a harmonious blend that celebrates the essence of summer:

  • The red stripes burst with the sweet and fruity essence of strawberry cake.
  • The white stripes offer a refreshing and bright kick of lemon cake.
  • And the blue stripe brings a unique and comforting almond cake flavor.

To crown this spectacular creation, the frosting could be nothing other than the beloved classic American cream cheese frosting – a truly iconic choice. Fun fact: did you know there’s even a dedicated day to celebrate National Cream Cheese Frosting day? It’s the perfect creamy, tangy counterpoint to our richly flavored cake layers, tying all the components together beautifully.

Crafting Your Vegan American Flag Cake: A Step-by-Step Guide

While the method for this stunning Fourth of July cake recipe is fundamentally simple, it undeniably requires a dose of patience and dedicated time. The intricate layering and vibrant coloring are worth every moment, culminating in a dessert that is as impressive to look at as it is to eat.

For comprehensive written instructions and precise ingredient measurements, please refer to the detailed **recipe card** located at the conclusion of this post. Alternatively, you can effortlessly navigate directly to the recipe by clicking the “jump to recipe” button conveniently placed at the top of this page. In the following sections, we’ll provide a concise overview of the steps involved, complemented by helpful visuals to enhance your understanding and ensure a smooth baking experience.

The foundational design of this patriotic masterpiece involves six cake layers in total. You will bake three distinct red cake layers and three equally delightful white cake layers to form the iconic stripes. The striking blue cake layer, which represents the flag’s canton, will be baked as a single, thicker layer. To ensure visual consistency and structural integrity, the blue cake layer’s recipe has been thoughtfully reduced to two-thirds of the original volume, allowing it to seamlessly match the combined height of two individual stripe layers. This meticulous planning ensures that when assembled, your cake perfectly embodies the American flag’s recognizable proportions.

To streamline the baking process and minimize confusion, we highly recommend treating each colored cake (red, white, and blue) as if you were preparing three entirely separate cake recipes. While this might seem like a substantial amount of work, it will prove invaluable for managing your ingredients, preventing cross-contamination of colors, and ensuring each layer bakes to perfection. Crucially, this method also means you won’t need an overwhelming seven cake pans simultaneously; instead, you can efficiently work with just 1 to 3 pans in rotation.

A key element in achieving the vibrant hues of our vegan American Flag Cake lies in the use of natural food colorings. For the striking blue, we recommend Blue Butterfly Pea Flower Powder, known for its beautiful, deep blue pigment. For the patriotic red cake layer, we’ve found that a combination of Pitaya Powder (also known as Dragon Fruit powder) and Beet Powder yields the most rich and authentic red shade. While beet powder alone can produce a lovely pink, adding a touch of pitaya powder provides the saturated, true red color we desire for our flag cake. These natural alternatives ensure a stunning visual without artificial additives, perfectly aligning with a wholesome, plant-based approach.

Assembling the American Flag Layer Cake: Precision and Artistry

Once your beautifully baked cake layers have cooled completely, the intricate assembly process begins. The first crucial step is to “torte” the cakes, which simply means leveling off any domed tops to create flat, even surfaces. This ensures a stable and aesthetically pleasing stacked cake. You can achieve this with a large serrated knife for precision or utilize a specialized cake torte tool if you have one.

Following this, ensure that your carved blue stripe and its corresponding red and white inner stripes are perfectly prepared and ready for integration into the cake’s structure. This pre-assembly step is vital for a smooth and successful final construction.

The core of the flag design involves fitting two cake layers (one red and one white) precisely into the center of the blue cake layer, meticulously recreating the iconic American Flag motif. To achieve this, select a small bowl, approximately 6 inches in diameter, and use it as a guide to carefully cut a circle from the center of your blue cake layer. The larger, outer ring of the blue cake layer will form the blue canton of your flag. Next, repeat this precise cutting process for both a red and a white cake layer. This time, however, you will save the inner circles from these layers, as these will become the central red and white stripes within the blue section.

Now, it’s time for the grand assembly of your flag cake! The strategic stacking order is crucial for the flag’s visual effect: begin with a red layer, followed by white, then red, another white, and finally, the meticulously prepared BLUE layer with its red and white inner stripes carefully placed in the middle. Between each layer, apply an even and generous amount of our luscious vegan cream cheese frosting, ensuring every bite is moist and flavorful.

To seamlessly insert the middle stripes into the blue cake layer: first, stack the smaller red and white cake layers together in that precise order, creating a mini two-layer cake. Once the blue cake ring has been carefully positioned on top of the main stacked cake, then gently and precisely place this assembled red and white mini cake into the central opening of the blue cake layer. This method ensures stability and a stunning reveal when sliced.

With the intricate flag design firmly in place, you can now proceed to frost the exterior of your cake as desired, either with a smooth, classic finish or a more decorative flourish. Remember to apply a thin crumb coat first, chilling the cake to set it, before applying the final, thicker layer of frosting. This extra step guarantees a pristine, crumb-free finish for your magnificent vegan American Flag Cake!

Instructions

  1. Preparation is Key: Please thoroughly read through all instructions before beginning to bake. It is also highly recommended to review the blog post for visual references, especially when assembling the cake, as the visual guide can be extremely helpful.
  2. Oven and Pan Preparation: Preheat your oven to 350°F (175°C). If you possess seven 8-inch cake pans, you can prepare them all at once. Otherwise, prepare just three 8-inch cake pans by lining their bottoms with parchment paper and lightly oiling the sides. You will bake the cakes in three separate rounds, utilizing these three pans for each round (except for the blue cake, for which you’ll only need one pan). Before you start each cake section, meticulously measure out all your ingredients. Prepare the vegan buttermilk by combining the dairy-free milk with the apple cider vinegar, then set it aside for 5-6 minutes to curdle slightly. Use this time to weigh and measure your remaining ingredients.
  3. Begin with the White Cake Layer: It’s best to start here to ensure purity of color and flavor.
    1. Combine Dry Ingredients: In a medium bowl, whisk together the flour, baking powder, and baking soda. Set this mixture aside.
    2. Prepare the Batter: In a stand mixer fitted with a paddle attachment, or using a large bowl and a hand mixer, cream together the softened vegan butter and granulated sugar until the mixture is light and fluffy, typically 2-3 minutes. Remember to scrape down the sides of the bowl as needed. Next, incorporate the applesauce, fresh lemon juice, lemon zest, and vanilla extract. Mix again on medium speed until all ingredients are well combined, continuing to scrape the sides and bottom of the bowl. Gradually add approximately half of the dry flour mixture, followed by half of the vegan buttermilk, mixing on medium speed until just combined. Incorporate the remaining dry mixture and vegan buttermilk, mixing only until no dry streaks of flour remain. Ensure you scrape the bottom and sides of the bowl for even mixing.
    3. Bake the Layers: Evenly divide the prepared white cake batter between three 8-inch cake pans. Bake for 27-30 minutes, or until a toothpick inserted into the center of a cake comes out clean.
    4. Cooling: Remove the baked cakes from the oven. Allow them to cool in their pans for 10 minutes before carefully transferring them to a wire cooling rack to cool completely. Once cooled, you can proceed to the next cake layer.
  4. Prepare the Red Cake Layer: Begin by preparing a fresh batch of vegan buttermilk. Repeat sub-steps 1-4 from the white cake layer instructions. This time, substitute the lemon juice and zest with the strawberry jam. Crucially, after adding the applesauce, strawberry jam, and vanilla extract, incorporate the vegan red food coloring. Mix thoroughly until the color is uniformly distributed throughout the batter. Then, bake the red cake layers following sub-steps 3 and 4. Once these cakes have cooled sufficiently to be transferred to a cooling rack, allow them to cool completely before moving on to the final cake layer.
  5. Construct the Blue Cake Layer: Once more, prepare the vegan buttermilk. Follow sub-steps 1-4 of the white cake layer instructions, but now replace the lemon juice and zest with almond extract. After incorporating the vanilla and almond extract, add the blue food coloring powder. Mix carefully until the blue color is evenly vibrant. Bake this single blue cake layer using sub-steps 3 and 4. Once baked, transfer the blue cake to a cooling rack to cool entirely.
  6. Leveling the Cooled Cakes: Once all your cake layers have fully cooled, it’s time to “torte” them. Carefully level off any domes on the cake layers using a large serrated knife or a specialized cake leveler. Save any delicious cake scraps – they are perfect for making other treats like vegan cake pops or truffles!
  7. Carving the Flag Design: This step is critical for the flag effect. Refer to the photos in the blog post for visual guidance, and you might find Food52’s video tutorial particularly helpful.
    1. Blue Cake Layer Carving: Take one of your blue cake layers and select a small bowl, approximately 6 inches in diameter. Place this bowl directly in the center of the blue cake layer to use as a template. Using your serrated knife, carefully carve a circle into the cake. Gently remove the inner blue cake circle; this piece will not be used for the flag design. The remaining outer blue cake ring will form the blue part of your flag.
    2. Red and White Inner Stripes: For efficiency, it’s easiest to stack one red cake layer directly on top of one white cake layer. The order of these two does not matter at this stage. Place the same 6-inch bowl directly in the middle of the top cake layer. Using the serrated knife, carve a circle through both stacked cake layers. This time, carefully remove the outer cake rings from both the red and white layers. The two smaller, central cake circles (one red, one white) will become your inner stripes for the blue section of the flag.
  8. Prepare the Vegan Cream Cheese Frosting: In a stand mixer with a whisk attachment (or using a large bowl and a hand mixer), cream together the softened vegan butter and vegan cream cheese until the mixture is fluffy and lighter in color, about 3-4 minutes. Gradually sift in the powdered sugar, adding it 1 cup at a time, and mixing on medium-high speed until each cup is fully integrated into the butter-cream cheese mixture. Finally, add the vanilla extract and continue to cream until the frosting is light, airy, and perfectly fluffy. Store the frosting in the refrigerator until you are ready to assemble the cake to maintain its consistency.
  9. Assemble the Flag Cake: Ensure your frosting is at a spreadable consistency and that all cake layers are completely cool. A cake turntable will greatly simplify the frosting process. For the stripe pattern, we recommend starting with a red layer at the bottom, then white, then red, then white, followed by the blue cake ring with the red and white inner stripes (refer to the blog post photos for visual confirmation of the order). Keep the precise order of the inner red and white stripes in mind as you assemble.
    1. Stacking the Main Layers: Begin by placing the first red cake layer on your serving platter or cake stand. Apply approximately 1/3 cup of frosting evenly across the top, spreading it to the edges without making the layer too thick. Place a white cake layer on top and repeat the frosting process. Continue this pattern with another red cake layer, followed by a final white cake layer, each separated by an even layer of frosting.
    2. Assembling the Inner Stripes: On a separate plate, carefully place the smaller red cake circle at the bottom. Spread about 1/8-1/4 cup of frosting over its surface. Then, gently place the smaller white cake circle on top. Set this mini-stack aside.
    3. Integrating the Blue Canton: Place the blue cake ring (the outer portion you carved earlier) directly on top of your main stacked cake. Next, very carefully pick up the assembled red and white mini-stack (from step 14) and gently lower it into the central hole of the blue cake ring. A large spatula can be a helpful tool for this delicate maneuver to ensure stability.
  10. Crumb Coat and Chill: Apply a thin layer of frosting all over the cake – this is known as a crumb coat. Its purpose is to seal in any loose crumbs. Place the cake into the refrigerator to chill for at least 20 minutes, allowing the crumb coat to firm up. Once chilled, retrieve the cake and apply the remaining frosting to achieve your desired final finish.
  11. Serving and Storage: Store the finished cake in the refrigerator until you are ready to serve. If you plan to serve it the following day, chill the cake in the fridge for about an hour after frosting. Then, carefully wrap the entire exterior of the cake with plastic wrap to prevent it from drying out, and return it to the refrigerator until your event.

Notes

For Gluten-Free Option: If you need to make this cake gluten-free, simply substitute the all-purpose flour with a high-quality gluten-free 1:1 baking flour blend, such as Bob’s Red Mill in the blue bag, in all cake layers.

Alternative Flavor Option (All Vanilla): If you prefer a more traditional flavor profile and wish to omit the distinct lemon, strawberry, and almond flavors, you can certainly make this an entirely vanilla-flavored cake. Just ensure you adjust the applesauce quantity in the red cake layer back to the same measurement as used in the white cake layer recipe, and use vanilla extract for all layers.

Crucial Tip: We cannot stress this enough – please take the time to read the entire blog post before beginning the baking process, and pay close attention to all the provided visuals. The images and detailed explanations throughout the post are invaluable for understanding the complex layering and carving steps, which will significantly contribute to your cake’s success!
