sliced vegan snickers bars

The original Snickers bar, with its harmonious blend of sweet, salty, and nutty flavors encased in a chocolate shell, has been a global favorite for decades. Its unique texture profile – the soft, airy peanut butter nougat, the luscious, sticky caramel, and the satisfying crunch of roasted peanuts – creates an unforgettable indulgence. For those living a vegan lifestyle or with dairy sensitivities, finding a suitable substitute for such a beloved treat can often be a challenge. That’s where this recipe comes in.

Instead of merely waiting for commercial brands to catch up, we’ve taken matters into our own hands, crafting a vegan Snickers bar that not only rivals the original but might even surpass it in homemade goodness. Much like our popular vegan Twix bars and vegan candy corn, this recipe proves that transitioning to plant-based doesn’t mean sacrificing flavor or fun.

Why You’ll Love These Vegan Snickers Bars

These homemade vegan Snickers bars are more than just a sweet treat; they’re a testament to how delicious and accessible plant-based baking can be. They are undetectably dairy-free, yet deliver an explosion of classic Snickers flavor. In fact, one of our most discerning taste-testers, a true candy connoisseur, was convinced these were store-bought. That’s how authentic and satisfying they are!

Unlike many “healthy” vegan candy bar recipes that rely heavily on dates for sweetness and texture, our recipe takes a different approach. While dates are a fantastic whole food, they often require soaking and processing, adding an extra step to your prep. We’ve streamlined the process, ensuring you can whip up a batch of these incredible bars without any unnecessary fuss. Get ready to enjoy a nostalgic flavor experience that’s perfect for Halloween, parties, or simply satisfying your sweet tooth any time of year.

The Anatomy of a Perfect Vegan Snickers Bar

Recreating the magic of a Snickers bar means nailing each distinct layer. Here’s what makes our vegan version so special:

  • Fluffy Peanut Butter Nougat: The base of our bar is a wonderfully soft and airy nougat, infused with rich peanut butter flavor. This layer provides a delightful chewiness and melts in your mouth.
  • Crunchy Roasted Peanuts: Scattered generously throughout, these provide the essential nutty crunch that Snickers is known for, adding texture and depth to every bite.
  • Chewy Cashew Caramel: Our innovative caramel is incredibly easy to make, yet achieves that perfectly sticky, sweet, and slightly salty chewiness. It’s the ideal counterpoint to the nougat and peanuts.
  • Smooth Dairy-Free Chocolate Coating: A generous layer of high-quality vegan chocolate wraps everything together, providing a satisfying snap and a rich, decadent finish.

Key Ingredients for Vegan Snickers Bars

Crafting these delectable vegan Snickers bars requires a few thoughtful ingredient choices to ensure authentic flavor and texture. Here’s a detailed look at what you’ll need and why:

  • Vegan Marshmallows: These are the secret to our impossibly fluffy and chewy peanut butter nougat. Brands like Dandies vegan marshmallows or Trader Joe’s offer excellent dairy-free options that melt beautifully. They provide the classic marshmallow-based nougat texture without gelatin.
  • Coconut Milk or Vegan Evaporated Milk: For the creamiest nougat, evaporated coconut milk or thick coconut cream works wonders. If you’re sensitive to coconut flavor, or prefer a neutral taste, a high-quality vegan heavy cream can be used as an alternative. This liquid component helps achieve the perfect consistency.
  • Peanut Butter: Creamy peanut butter is essential for both the nougat and for achieving that signature Snickers flavor. While unsalted works, a good quality salted peanut butter can actually enhance the overall sweet-and-salty balance of the candy bar. Ensure it’s smooth and well-stirred.
  • Powdered Sugar: Also known as confectioners’ sugar, this fine sugar is crucial for the nougat’s smooth texture and sweetness. It dissolves easily and contributes to the bar’s pleasant chewiness without adding graininess.
  • Vegan Butter: Used in both the nougat and the caramel, vegan butter adds richness, flavor, and helps achieve the right consistency. Opt for a stick vegan butter that is unsalted for best control over the flavor.
  • Cashew Butter: This is the star of our incredibly easy and delicious vegan caramel. When combined with vegan butter and maple syrup, cashew butter creates a smooth, rich, and wonderfully chewy caramel that’s reminiscent of traditional caramel, but much simpler to make from scratch. It’s also used in our vegan Twix bars for a similar effect. While you could technically make a batch of our homemade vegan salted caramel, this cashew butter method is designed for speed and convenience without compromising flavor.
  • Maple Syrup: As a natural sweetener, maple syrup is integral to our caramel, providing sweetness and contributing to its gooey, chewy texture. Choose pure maple syrup for the best flavor.
  • Peanuts: Roasted peanuts are non-negotiable for that authentic Snickers crunch and nutty flavor. Salted peanuts are highly recommended to perfectly balance the sweetness of the nougat and caramel. If you prefer less salt, unsalted peanuts are also an option.
  • Vegan Chocolate: The final indulgent layer! High-quality vegan chocolate chips or baking bars are key for a rich, snappy coating. Popular brands like Enjoy Life, Guittard, or Valrhona offer excellent dairy-free options that melt smoothly and set beautifully.

Overview: Step by Step How to Make Homemade Vegan Snickers Bars

For detailed instructions and ingredient measurements, please refer to the recipe card at the bottom of this post. Here, we’ll walk through a brief overview of the process, complete with visuals to guide you.

peanut butter nougat layer
We begin by preparing the nougat layer. This involves gently melting vegan marshmallows on the stovetop, then incorporating peanut butter, vegan butter, evaporated dairy-free milk, and powdered sugar until a smooth, combined mixture forms. This is then pressed evenly into your prepared pan.
cashew caramel in a bowl
While the nougat chills and sets in the freezer, whisk together the ingredients for our rich cashew caramel. This quick process ensures your caramel is ready when the nougat is sufficiently firm.

Once the nougat is firm, retrieve it from the freezer. Sprinkle a generous layer of peanuts over the nougat, then evenly spread the prepared caramel sauce over the peanuts. Return the pan to the freezer for several hours to allow all layers to firm up completely. Afterwards, carefully slice the chilled block into 16 uniform candy bars.

Finally, dip each individual bar into your favorite melted vegan chocolate, ensuring it’s fully coated. Place the coated bars on parchment paper and allow them to set in the fridge or freezer until the chocolate hardens completely. Once set, they’re ready to be enjoyed!

Tips for Success When Making Vegan Snickers

Achieving perfect vegan Snickers bars is simple with a few key tips:

  • Prep Your Pan: Always line your baking dish with parchment paper, leaving an overhang on the sides. This creates “handles” that make it incredibly easy to lift the entire chilled block out for slicing.
  • Melt Marshmallows Gently: When melting marshmallows for the nougat, keep the heat on medium-low and cover the pan. This allows them to puff up and melt evenly without burning. Stir frequently once they start to soften.
  • Chill Thoroughly: Adequate chilling time is crucial for both the nougat and the combined layers. Don’t rush this step! A firm base makes for easier spreading and clean slicing.
  • Perfect Your Chocolate Coating: When melting chocolate, use a double boiler or microwave in short bursts (15-30 seconds), stirring thoroughly after each interval. This prevents burning and ensures a smooth, workable consistency. Let the chocolate cool slightly (but remain liquid) before dipping to avoid melting the candy bars.
  • Work Quickly While Dipping: Have your prepared bars and melted chocolate ready. Work efficiently, using two forks to dip and coat each bar, allowing excess chocolate to drip off before placing it on parchment paper.
  • Even Slicing: For uniform bars, gently warm a sharp knife under hot water, dry it, and slice the chilled block. Wipe the knife clean between each cut for the cleanest edges.

Can I Use Another Nut or Nut Butter for Vegan Snickers?

Absolutely! The beauty of homemade candy bars is the flexibility to customize them to your liking or dietary needs. While peanuts and peanut butter are classic for a Snickers bar, you can certainly experiment with other nuts and nut butters for a delightful twist. Since we already use cashew butter in our caramel for its smooth texture, it blends seamlessly if you wish to swap out the peanut butter entirely.

  • Almond Butter & Almonds: For an almond-centric bar, replace peanut butter with creamy almond butter and use roasted almonds instead of peanuts.
  • Cashew Butter & Cashews: If you love cashews, replace the peanut butter in the nougat with cashew butter and use roasted cashews. This will create a very cohesive flavor profile.
  • Sunflower Seed Butter & Seeds: For a nut-free option, sunflower seed butter (SunButter) and roasted sunflower seeds are excellent choices. Be aware that sunflower seed butter can sometimes turn green when exposed to baking soda or certain temperatures, but this won’t affect the taste.
  • Hazelnut Butter & Hazelnuts: Imagine a Nutella-like Snickers! This would be a rich and luxurious variation.

Feel free to get creative with your nut and seed choices to personalize these bars to your taste preferences.

How to Store Homemade Vegan Snickers Bars

Proper storage is key to maintaining the freshness and delicious texture of your homemade vegan Snickers bars. Once they are fully set and the chocolate has hardened:

  • Refrigeration: Store your bars in an airtight container in the refrigerator for up to one week. The cool temperature helps maintain the firmness of the nougat and caramel, and keeps the chocolate from melting.
  • Freezing: For longer storage, these bars freeze beautifully! Place them in an airtight freezer-safe container or bag, separating layers with parchment paper to prevent sticking. They can be frozen for up to 2-3 months. Surprisingly, they are absolutely delicious eaten straight from the freezer, offering an even chewier, firmer bite, or you can let them thaw for a few minutes at room temperature before enjoying.

Description

These vegan Snickers bars taste just like the classic with a quick and easy chewy caramel, crunch peanuts, and fluffy peanut butter nougat all coated in dairy free chocolate. The best part- no need for any dates!

Ingredients

Scale

Nougat Layer:

  • 7 ounces vegan marshmallows
  • 1/4 cup (57 g) vegan butter, room temperature
  • 1/4 cup (60 mL) evaporated coconut cream, coconut cream, or vegan heavy cream
  • 1/4 cup (65 g) creamy peanut butter
  • 1/2 cup (60 g) powdered sugar

Cashew Caramel:

  • 1 cup (250 g) creamy and smooth cashew butter
  • 3/4 cup (170 g) coconut oil or vegan butter, melted and cooled
  • 3/4 cup (160 mL) maple syrup
  • 1 cup (132 g) shelled peanuts

Chocolate Coating:

  • 10 ounces (283 g) vegan chocolate chips

Instructions

  1. Prep: Line an 8×8″ baking dish with parchment paper, allowing some overhang on the sides for easy removal.
  2. Make the Nougat: In a medium saucepan, add the vegan marshmallows. Place over medium heat and cover the pan. Allow the marshmallows to cook gently until they begin to puff and become melty, which should take approximately 5 minutes. Remove the lid, then add in the vegan butter, evaporated dairy-free milk (or coconut cream/vegan heavy cream), creamy peanut butter, and powdered sugar. Stir continuously until all ingredients are completely combined and melted into a smooth, thick nougat mixture.
  3. Press Nougat Layer: Carefully spoon the warm peanut butter nougat mixture into the prepared 8×8″ baking dish. Use a spatula to spread it evenly to all edges of the pan. Place the pan into the freezer to chill and set while you prepare the caramel. This ensures the nougat is firm enough to handle.
  4. Make the Caramel Sauce: While the nougat is chilling, prepare the cashew caramel. In a food processor or a medium bowl, combine the creamy and smooth cashew butter, melted and cooled coconut oil (or vegan butter), and maple syrup. Blend or whisk these ingredients together until the mixture is completely creamy and smooth, with no lumps.
  5. Assemble the Snickers Layers: Remove the chilled nougat layer from the freezer. Evenly sprinkle the shelled peanuts over the nougat. Then, gently pour and spread the prepared caramel sauce over the layer of peanuts, ensuring an even coating.
  6. Freeze to Set: Place the pan with all layers back into the freezer. Allow it to chill for at least 1 hour, or until all layers are firm enough to be cleanly sliced. For best results, a longer chill of 2-3 hours is recommended.
  7. Melt the Chocolate: After the layers have chilled, it’s time to prepare the chocolate coating. Heat the vegan chocolate chips until smoothly melted. This can be done using a double boiler method (placing a heat-proof bowl over a pot of simmering water) or carefully in the microwave. If microwaving, heat in 30-second intervals, stirring thoroughly after each, until mostly melted. Remove from the microwave and continue stirring until completely smooth to prevent burning. Ensure the chocolate is warm and fluid, but not excessively hot, so it won’t melt the candy bars immediately upon dipping.
  8. Slice the Bars: Remove the chilled candy bar block from the freezer using the parchment paper overhang. Place it on a cutting board. Using a sharp knife that has been warmed under hot water (and dried), slice the caramel nougat layer into 16 equal-sized bars. Clean the knife between each cut for neat edges.
  9. Coat in Chocolate: Line a baking sheet with fresh parchment paper. Using two forks (one to hold the bar, one to assist with dipping and removal), carefully take one bar and dip it completely into the melted vegan chocolate, flipping it over to ensure full coverage. Allow any excess chocolate to drip back into the bowl. Gently place the coated bar onto the parchment-lined baking sheet. Repeat this process for all remaining bars. If you have any leftover melted chocolate, you can drizzle it decoratively over the tops of the bars.
  10. Set and Enjoy: Place the baking sheet with the coated bars into the fridge for 12-15 minutes, or until the chocolate coating is completely firm. Once set, remove and enjoy your homemade vegan Snickers bars! Store any leftovers in an airtight container in the fridge for up to a week, or freeze for longer enjoyment.
