The enchanting combination of chocolate and hazelnut holds a special place in many hearts, including mine. I vividly recall my first encounter with this magical pairing. It was during a childhood playdate at the home of a Dutch friend. Her mother, a warm and welcoming woman, introduced me to what seemed like a bizarre concept at the time: a Nutella sandwich. Used to the familiar comfort of peanut butter, I was initially perplexed. However, that first bite was a revelation – a creamy, sweet, chocolatey, nutty explosion that instantly hooked me. From that day forward, my love affair with chocolate and hazelnut began.

For many, the idea of a “flourless” cookie, especially one that is also vegan, might seem like a culinary enigma. How do these delectable chocolate bites hold together without traditional binders like flour or eggs? My initial research into flourless chocolate cakes and cookies revealed that many rely heavily on powdered sugar and egg whites – ingredients that are certainly not vegan-friendly. This insight fueled my determination to create a genuinely low-sugar, yet utterly decadent, vegan cookie that was completely free of flour. No need for almond flour, coconut flour, or any other gluten-free substitutes here! It was a fun challenge, and I quickly discovered that moisture is the secret ingredient for achieving the perfect texture. By the second attempt, I had perfected the recipe!

The magic of these paleo vegan flourless chocolate hazelnut cookies lies in a few star ingredients. We start with whole raw hazelnuts, which form the rich, nutty base. Cacao powder brings intense chocolate flavor and antioxidants. Maple syrup or coconut sugar provides natural sweetness. And the true hero for structure and binding, especially in a flourless and vegan recipe, is ground chia seed. While you can grind your own chia seeds, I personally prefer using trusted brands like Nutiva or Salbachia for consistent quality and convenience. Chia seeds, when mixed with water, form a gel-like consistency that acts as an incredible egg substitute and binder, perfectly replacing the need for flour in this recipe.

Effortless Baking: Tips & Tricks for Perfect Paleo Vegan Flourless Chocolate Hazelnut Cookies

One of the many joys of these flourless chocolate hazelnut cookies is their simplicity. The entire process, from start to finish, comes together in a single food processor. This means minimal cleanup and maximum efficiency! The key is to transform the raw hazelnuts into a smooth, creamy butter, which forms the luscious foundation of these cookies. Start by lightly crushing the hazelnuts, then, if you desire a beautiful decorative touch like I do, reserve about half a cup of these crushed nuts. These will be perfect for sprinkling over melted chocolate coating later, adding a delightful crunch and visual appeal. Continue blending the remaining hazelnuts until they reach a thick, smooth, and spreadable hazelnut butter consistency. This step is crucial for the final texture of your cookies.

Once your hazelnut butter is ready, the rest is remarkably straightforward. Simply add all the remaining ingredients (excluding the optional chocolate chips for coating) into the food processor. Blend everything together until a cohesive, sticky, and thick dough forms. This dough is the essence of your perfect flourless chocolate hazelnut cookies! Next, roll the dough into small, uniform balls. Gently flatten each ball with the back of a spoon before placing them on a baking sheet lined with parchment paper or tin foil. Don’t worry about them spreading too much – these cookies maintain their shape beautifully. Bake for approximately 10 minutes until they are lightly set, then allow them to cool completely. The patience during cooling is rewarded with a firm yet tender cookie.

Optional Enhancements: A Decadent Chocolate Coating

To elevate these already incredible cookies to another level of indulgence, consider adding an optional chocolate coating. While your cookies are cooling, melt your favorite vegan chocolate chips in a microwave-safe bowl. Heat in short intervals, stirring frequently, until smooth and glossy. Once the cookies are cool, arrange them on parchment paper and spoon a small amount of melted chocolate over half of each cookie, spreading it gently. Immediately sprinkle those reserved hazelnut crumbs on top for an added layer of texture and flavor. The combination of the rich chocolate, crunchy hazelnuts, and the soft, chewy cookie base is simply divine. Whether enjoyed plain or with a lavish chocolate coating, these paleo vegan flourless chocolate hazelnut cookies are guaranteed to become a new favorite in your kitchen.

Description

These paleo vegan flourless chocolate hazelnut cookies offer all the decadent flavor of a spoonful of Nutella, crafted with only 6 real and simple ingredients. They are the perfect guilt-free treat for any chocolate and hazelnut lover!

Ingredients

Scale

  • 16 oz raw hazelnuts (skin removed)
  • 2/3 cup cacao powder
  • 1/2 tsp baking soda
  • 1/2 cup coconut sugar (or maple syrup for a liquid sweetener alternative)
  • 2 tbsp ground chia seed + 1/3 cup warm water (allow to sit for 5 minutes to form a gel)
  • 1/4 cup unsweetened almond milk
  • 1 tsp vanilla bean powder or extract
  • 1/4 tsp sea salt

Optional Chocolate Coating & Topping:

  • 1/2 cup vegan chocolate chips (for melting)
  • Reserved hazelnut crumbs (from step 4)

Instructions

  1. Begin by preheating your oven to 350°F (175°C). Line a baking sheet with tin foil or parchment paper to prevent sticking.
  2. Evenly spread the raw hazelnuts on the prepared baking sheet. Roast them in the preheated oven for approximately 5-7 minutes, or until they become fragrant and lightly toasted. Keep a close eye on them to prevent burning.
  3. Carefully remove the roasted hazelnuts from the oven and transfer them immediately to your food processor.
  4. Process the hazelnuts until they are coarsely crushed. At this point, pause the food processor and remove about 1/2 cup of the crushed nuts. Set these aside for an optional topping later. Continue blending the remaining hazelnuts until they transform into a smooth, creamy hazelnut butter. This might take several minutes, scraping down the sides as needed.
  5. Once you have a luscious hazelnut butter, add the rest of the ingredients to the food processor (cacao powder, baking soda, coconut sugar or maple syrup, prepared chia seed gel, unsweetened almond milk, vanilla, and sea salt). Blend all ingredients together until a thick, sticky, and uniform dough forms.
  6. Roll the dough into small, evenly sized balls. Place them on a baking sheet lined with parchment paper or tin foil. Gently flatten the top of each dough ball with the back of a spoon. These cookies don’t spread much during baking, so don’t hesitate to give them a slight press.
  7. Bake for approximately 10 minutes. The cookies will be soft when they come out of the oven but will firm up as they cool. Allow them to cool completely on the baking sheet before handling.

Optional Chocolate Coating & Hazelnut Topping:

  1. While the cookies are cooling, prepare the optional chocolate coating. Place the vegan chocolate chips in a microwave-safe bowl. Microwave in 30-second intervals, stirring well after each, until the chocolate is completely melted and smooth.
  2. Once the cookies are fully cooled, arrange them on a piece of parchment paper. Spoon a small amount of melted chocolate onto one half of each cookie and gently spread it with the back of the spoon or a small spatula.
  3. Immediately sprinkle the reserved hazelnut crumbs over the melted chocolate before it sets. Allow the chocolate to harden completely before serving. Enjoy these delectable paleo vegan flourless chocolate hazelnut cookies!
