Crispy & Delicious Roasted Red Cabbage Steaks: A Simple Vegan Recipe
Transform humble red cabbage into a vibrant, garlicky, and tangy culinary delight! This easy roasted red cabbage recipe yields perfectly crispy edges with tender, sweet centers, elevated further by a dreamy creamy yogurt dill sauce. Whether served as hearty “steaks” or as a colorful side, it’s a naturally vegan, gluten-free dish that’s bursting with flavor and nutrients, making it a staple for any meal.

The Magic of Perfectly Crispy Roasted Red Cabbage
You’re about to discover how incredibly simple it is to create the most flavorful and visually stunning roasted red cabbage. With just a handful of pantry staples – red cabbage, fresh garlic, a good quality oil, sea salt, and a sprinkle of fresh herbs – you can achieve a side dish that’s both deeply satisfying and incredibly healthy. Roasting brings out an inherent sweetness in the cabbage, complementing its natural peppery notes and transforming its texture into something irresistibly tender-crisp.
This versatile recipe allows you to prepare red cabbage in two fantastic ways: slice it into substantial “steaks” for an impressive main course or a robust side, or shred it into smaller pieces for a more traditional roasted vegetable accompaniment. Much like our popular crispy garlic roasted cauliflower and skillet Brussels sprouts, this roasted red cabbage is so delicious, it can easily stand alone as a light meal, especially when paired with a flavorful dipping sauce.
Why Roasting Red Cabbage is a Game Changer
Roasting isn’t just a cooking method; it’s a flavor enhancer. High heat caramelizes the natural sugars in red cabbage, resulting in a sweet, slightly nutty flavor that’s far more complex than boiled or steamed cabbage. The edges become beautifully crisp and charred, adding an appealing texture contrast to the tender interior. Beyond taste, roasting is a hands-off approach, freeing you up to prepare other components of your meal. It’s also an excellent way to concentrate the vibrant color and nutritional goodness of this cruciferous vegetable.
Essential Ingredients for Your Roasted Red Cabbage
Crafting this simple yet spectacular dish requires just a few key ingredients, each playing a crucial role in achieving that perfect balance of flavor and texture:
- Red Cabbage: The star of our dish! Choose a firm, dense head of cabbage with brightly colored leaves. Red cabbage is not only visually striking but also packed with antioxidants, making it a nutritious choice.
- Garlic: Freshly minced garlic is non-negotiable here. It infuses the cabbage with an aromatic, pungent flavor that is quintessential to this recipe’s appeal.
- High-Heat Friendly Oil (Vegan Butter, Coconut Oil, or Avocado Oil): For successful high-heat roasting, selecting the right fat is crucial. While olive oil is fantastic for finishing, it has a lower smoke point and can break down at the temperatures needed to achieve crispy cabbage. Vegan butter (often made with coconut oil), pure coconut oil, or avocado oil are excellent alternatives, as they can withstand high temperatures without burning, ensuring your cabbage gets beautifully crisp and golden.
- Sea Salt: Essential for seasoning, sea salt brings out the natural flavors of the cabbage and garlic, enhancing every bite. Freshly cracked black pepper is also a welcome addition.
- Fresh Herbs: We recommend a vibrant mix of fresh parsley and dill. These herbs add a layer of freshness and aromatic complexity. Feel free to experiment with other herbs based on the season or your preference, such as basil for a summer twist, or rosemary and thyme for a more earthy, warming flavor in colder months.

Creative Flavor Variations for Your Roasted Red Cabbage
While the classic garlic and herb combination is undeniably delicious, don’t hesitate to experiment with different seasonings to jazz up your roasted red cabbage. These flavor profiles offer exciting twists, transforming your side dish into an entirely new experience:
- Ginger Soy Infusion: For an Asian-inspired flair, whisk together 2 tablespoons of soy sauce (or Tamari for a gluten-free option), 1 tablespoon of Dijon mustard, 1 teaspoon of ground ginger, and 1/2 teaspoon of garlic powder. Brush this marinade over the cabbage before roasting for a savory, umami-rich result. The ginger adds a zesty warmth, while the soy sauce provides depth.
- Aromatic Curry Spice: Embrace the flavors of India with a simple curry blend. Sprinkle about 1 tablespoon of your favorite curry powder (such as Simply Organics blend) evenly over the cabbage before roasting. The spices will toast in the oven, releasing incredible aromas and a warm, complex taste that pairs wonderfully with the sweetness of roasted cabbage.
- Smoky BBQ Delight: Bring a touch of the backyard grill to your oven. Combine 1 teaspoon of ground cumin, 1 teaspoon of smoked paprika, 1 teaspoon of garlic powder, and 1 teaspoon of chili powder. This dry rub creates a robust, smoky flavor. For an extra treat, drizzle some homemade 5-minute vegan BBQ sauce over the roasted cabbage just before serving.
- Bright Herbed Lemon: For a fresh and zesty option, skip the traditional herbs and opt for a generous splash of lemon. Drizzle 2-3 tablespoons of fresh lemon juice along with 1 tablespoon of an Italian herb blend (like oregano, basil, and thyme) over the cabbage before roasting. The lemon juice brightens the flavors and adds a tangy finish.
Red Cabbage vs. Green Cabbage: Can You Cook Them the Same?
Absolutely! While red cabbage boasts a slightly firmer texture and a richer, earthier flavor profile compared to its green counterpart, both cabbages can be roasted using the exact same method. In fact, the sturdiness of red cabbage makes it particularly well-suited for slicing into elegant “steaks” that hold their shape beautifully during roasting. If green cabbage is more readily available or you simply prefer it, feel free to substitute it in this recipe. The roasting process will bring out its inherent sweetness and give it a lovely crispy texture, just as it does with red cabbage.

Storage and Reheating Tips
Leftover roasted red cabbage can be stored in an airtight container in the refrigerator for up to 3-4 days. To reheat, spread the cabbage on a baking sheet and warm in a preheated oven at 350°F (175°C) for about 10-15 minutes, or until heated through and slightly re-crisped. Avoid microwaving if you want to retain the crispy texture.
Nutritional Spotlight: The Health Benefits of Red Cabbage
Red cabbage isn’t just delicious; it’s a nutritional powerhouse! It’s an excellent source of vitamin C, vitamin K, and dietary fiber. The vibrant purple hue comes from anthocyanins, powerful antioxidants that contribute to various health benefits, including reducing inflammation and supporting brain health. Description
This roasted red cabbage recipe is super easy, garlicky and tangy, and vibrantly delicious! Perfectly crispy with tender centers, and a creamy yogurt dill sauce to top!
Ingredients
- 1 whole red cabbage
- 2 tbsp vegan butter, melted (or avocado oil/coconut oil)
- 3 cloves garlic, minced
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh dill
- Sea salt & black pepper to taste
Instructions
- Prep: Preheat the oven to 425°F (220°C), and line a baking sheet with parchment paper. Wash the red cabbage thoroughly, and peel off any bad or worn outer leaves.
- Slice: Slice the red cabbage in half through the core. Then, take one of the halves and slice it lengthwise into 1-inch thick “steaks,” ensuring the core holds the slices together. You should get about 3 slices from each half. Repeat for the other half. Place the red cabbage steaks onto the prepared baking sheet in a single layer.
- Season: Generously brush the melted vegan butter (or oil) over the tops of the red cabbage steaks. Evenly sprinkle the minced garlic, chopped parsley, chopped dill, sea salt, and black pepper on top.
- Roast: Place the baking sheet into the preheated oven and roast for 30-40 minutes. The red cabbage will develop crispy edges and become tender in the center.
- Serve and Enjoy!: Serve your roasted red cabbage warm. It’s fantastic on its own or drizzled with a delicious yogurt dill sauce. Enjoy as a main dish or a vibrant side!
Notes
Oil Choice: You can use avocado oil or coconut oil in place of vegan butter for roasting. Olive oil is best reserved for finishing the dish, not for high-heat cooking.
