That’s essentially all the specialized equipment required! When constructing a four-tier cake like this Sleeping Beauty cake, you’ll need to insert dowels into three of the four tiers. The very top tier, being the lightest, won’t require additional support.

Crafting the Vegan Cake Layers:

  1. Preheat your oven to 350°F (175°C). Prepare two 8″ cake pans and two 6″ cake pans by lightly greasing them with olive or coconut oil. Line the bottoms with parchment paper rounds, then lightly flour the sides to ensure easy release.
  2. In a small bowl or liquid measuring cup, combine the apple cider vinegar with the unsweetened dairy-free milk. Stir gently and set aside for 5-10 minutes to allow it to curdle slightly, mimicking buttermilk.
  3. In a very large mixing bowl, whisk together the sifted flour, cane sugar, baking powder, baking soda, and sea salt until thoroughly combined. Set this dry mixture aside.

  4. Set aside about 2 cups of the white buttercream for later coloring. The remaining buttercream will be used for filling and crumb coating the cake tiers. Proceed to assemble your cake tiers (see Assembly section below).

Enchanting Cake Assembly:

  1. Once the buttercream is prepared and all cake layers are completely cool, place one half of each sliced cake layer onto its corresponding cake board. You will have two 8″ cake layers on two 8″ cake boards and two 6″ cake layers on two 6″ cake boards, ready for their first frosting.
  2. Begin building each tier individually. For an 8″ cake, spread approximately 1 cup of white buttercream frosting evenly over the top of the first layer, extending to the edges. Gently place the second 8″ cake half on top. Lightly frost the sides and top of this two-layer tier, aiming for a “naked cake” look, as you’ll need the remaining frosting for the blue decorative layer. Repeat this process for the remaining 8″ tier and both 6″ tiers. After completing each tier, place it into the fridge to chill for at least 10-15 minutes. Chilling helps stabilize the layers and makes the final stacking much easier.
  3. Once all individual tiers are chilled and firm (at least 10 minutes), it’s time to prepare the magical blue buttercream. Add the vegan blue food coloring to the reserved 2 cups of white buttercream. Using a hand mixer or stand mixer, beat until the color is vibrant and evenly distributed. Transfer this blue buttercream to a piping bag fitted with a round tip. Place the piping bag into the fridge to chill briefly as well; slightly firmer frosting makes for cleaner drips.
  4. Prepare the dowels for stability. Retrieve one 8″ cake tier from the fridge. Insert a cake dowel straight down through the center of the tier until it hits the cake board at the bottom. Mark the dowel where it meets the top of the frosting. Remove the dowel and cut it precisely at this mark. Use this piece as a guide to cut three more dowels of the exact same length (totaling four dowels for the two 8″ tiers). Place two of these cut dowels towards the middle of the first 8″ tier (ensuring they are slightly inward from where the next tier will sit) and return it to the fridge. Repeat this doweling process for the second 8″ tier, then for one of the 6″ tiers, cutting two dowels for the 6″ tier. The very top 6″ tier will not require dowels.
  5. Construct the magnificent tiered cake: Remove the blue frosting piping bag from the fridge and set it aside. Place the first 8″ cake tier (which should have two dowels inserted) onto your chosen cake plate or cake stand. Carefully lift and center the second 8″ cake tier on top of the first, intentionally placing it slightly crooked and to one side for that whimsical, charming effect. Insert two more dowels into this second 8″ tier. Next, place the doweled 6″ cake tier (containing two dowels) more towards the middle of the cake, on top of the doweled 8″ tier. Finally, place the last 6″ tier on top, again with a slight, playful tilt, ensuring it remains balanced.
  6. Now, for the signature blue drips! Pipe the blue frosting along the creases where the cake boards meet the frosting of each tier. Pipe generously enough to cover these junctions, allowing gravity to create charming little drips down the sides, just like in the movie.
