Love love love the recipe! I used cut up fresh lasagna sheets. So delicious. I’m seriously thinking of ditching my “traditional” vegan lasagna recipe as this is so much simpler to make and more versatile. Keeps perfectly in the freezer for later. Ideal for my non vegan husband. I just add his preferred protein on the side. A real comfort dish which is now a firm favourite in my household. Thank you Britt! – Lorna

It’s hearty, incredibly satisfying, and boasts ribbons of perfectly al dente lasagna noodles swimming in a savory broth brimming with tender lentils, fresh vegetables, and aromatic herbs.
What makes this soup so revolutionary is its universal appeal. Whether you adhere to a vegan diet or are simply seeking a delicious and comforting meal, this recipe will win you over. It’s packed with flavor and substance, delivering exceptional satiation – all without a trace of tofu or soy. For those who, like me, find immense comfort in a warm bowl of soup during the colder months, this recipe is a must-try. Alongside our beloved vegan gnocchi soup, hearty veggie stew, creamy vegan tortellini soup, luscious vegan butternut squash soup, and vibrant Tuscan white bean and kale soup, this lentil lasagna soup has quickly become a cherished winter staple.

Why This Vegan Lasagna Soup Will Become Your New Favorite
- Unbelievably Quick: Ready in Just 30 Minutes! This isn’t just a claim; this vegan lasagna soup truly comes together in half an hour, making it perfect for those hectic weeknights when you need a flavorful, homemade meal without spending hours in the kitchen. The magic lies in the simple, yet potent, combination of ingredients that create a deep, comforting flavor profile in record time.
- Pantry-Friendly Ingredients: Simple & Accessible. Forget searching for exotic items! The beauty of this recipe lies in its reliance on common pantry staples. Beyond your choice of vegan cheese (which, if you opt for our homemade vegan mozzarella, is also made from pantry basics), most ingredients are likely already in your kitchen, simplifying your shopping list and making spontaneous cooking a breeze.
- Authentic Lasagna Flavor, Reimagined as Soup. Prepare for a delightful culinary surprise. This soup legitimately captures the essence of the best (vegan) lasagna you’ve ever savored. It’s got that signature rich tomato base, the tender noodles, and the creamy, savory notes that define a classic lasagna, all ingeniously blended into a comforting soup. It truly is a match made in heaven.
- Protein-Packed & Tofu-Free: Wholesome & Nourishing. The star ingredient here is lentils, which are a nutritional powerhouse. Each generous serving of this soup delivers an impressive 20 grams of plant-based protein, providing sustained energy and satiety without any soy or tofu. Additionally, it’s loaded with nutrient-dense vegetables simmered in a wholesome, veggie-based broth, making it a secretly healthy dish that doesn’t compromise on comfort or taste.
- Ideal for Meal Prep: Effortless Planning. If you lead a busy life, work late, or are just beginning your journey into plant-based cooking, this soup is your perfect companion. This recipe yields 6 substantial servings, or even more if you prefer smaller portions, allowing you to easily prepare healthy, delicious meals for the entire week ahead. It reheats beautifully, making meal prep an absolute dream.
- Family & Non-Vegan Approved: A Crowd-Pleasing Dish. It’s a rare and wonderful thing to find a recipe that appeals to everyone, and this vegan lasagna soup does just that. Its rich, familiar flavors are so reminiscent of traditional lasagna that even the most dedicated meat-eaters in your family will be asking for second and third helpings. It’s a testament to how flavorful and satisfying vegan cuisine can be!

Is Lasagna Soup Truly Italian? Unpacking Its Delicious Origins
While wonderfully delicious and full of Italian-inspired flavors, lasagna soup, as we know it, isn’t a traditional Italian dish. Unlike classics such as tortellini en brodo, a staple often enjoyed during Christmas in Italy, lasagna soup is actually an Americanized culinary innovation. If you ask any Italian, they’ll likely confirm that authentic lasagna is a layered pasta dish, not a soup!
Instead of the meticulously stacked layers of noodles, ricotta, and bolognese, our vegan lasagna soup offers a harmonious blend of those beloved flavors in a creamy, rich tomato-based broth. We swap traditional ground beef with hearty lentils and incorporate delicious vegan cheese to create a comforting, plant-powered twist. Despite its non-Italian origin, this soup perfectly captures all the quintessential flavors and textures of a classic lasagna in a delightful liquid form. It’s cozy, incredibly flavorful, and truly feels like a warm hug in a bowl, especially comforting during the chilly months.
Key Ingredients for Your Perfect Vegan Lasagna Soup
Crafting this incredible soup relies on a thoughtful selection of ingredients, many of which you likely already have on hand. Here’s a closer look at the stars of our one-pot wonder:
- Lentils: The Hearty Protein Powerhouse. I typically opt for a mix of dried lentils, but brown, green, or red lentils will work beautifully. They provide a satisfying, meaty texture and an impressive protein boost, making this soup incredibly filling without any animal products.
- Tomato Sauce: The Flavor Foundation. Your favorite store-bought tomato sauce or marinara works wonderfully here. I’m partial to Lucini for its rich flavor, but any quality brand will lay a fantastic foundation for our soup’s robust taste.
- Crushed Tomatoes: For Depth and Thickness. Crushed tomatoes, such as those from Jovial, are distinct from strained tomatoes; they contribute a thicker, richer texture and a deeper tomato flavor to the soup, ensuring it feels substantial and hearty.
- Tomato Paste: Concentrated Tomato Goodness. A small amount of tomato paste goes a long way in intensifying the overall tomato flavor. Since we’re using a generous amount of broth, this paste ensures a concentrated, vibrant base.
- Vegetable Broth: The Liquid Gold. The quality of your broth significantly impacts the final flavor. I love making my own homemade vegetable broth, especially for soups, but a high-quality store-bought option is perfectly acceptable.
- Lasagna Noodles: The Signature Texture. Use either regular or gluten-free lasagna noodles. For those needing a gluten-free option, like my husband, Jovial Foods brand offers excellent gluten-free lasagna sheets that hold up perfectly in this soup. Break them into bite-sized pieces for easy eating.
- Garlic & Onion: The Aromatic Foundation. These are non-negotiable staples in any truly delicious soup recipe. They provide the fundamental savory and aromatic base that makes this lasagna soup so irresistible.
- Parsley & Basil: Freshness and Herbaceous Notes. Whether you use dried or fresh herbs, parsley and basil are essential for that classic Italian-inspired flavor. Fresh herbs will offer a brighter, more vibrant note.
- Vegan Cheese: For Creaminess and Indulgence. My top choice for a super creamy finish is the liquid Miyoko’s mozzarella. Alternatively, you can easily whip up my nut-free and soy-free 5-minute homemade liquid mozzarella, using simple pantry ingredients for a rich, cheesy touch.

Storage & Reheating Tips for Your Vegan Lasagna Soup
This recipe yields a generous amount, ensuring you have delicious leftovers for days to come. Properly storing your vegan lasagna soup is simple and ensures you can enjoy its comforting flavors whenever cravings strike:
Refrigeration: Any leftover soup can be stored in an airtight container in the refrigerator for up to 5 days. The flavors often deepen overnight, making it even more delicious the next day!
Freezing: For longer storage, this soup freezes beautifully for up to 3 months. To freeze, allow the soup to cool completely before transferring it to freezer-safe containers or bags. Leave a little headspace for expansion.
Reheating: For best results, thaw frozen soup overnight in the refrigerator. Once thawed (or directly from the fridge), transfer the desired portion to a pot and gently reheat on the stovetop over medium-low heat, stirring occasionally until warmed through. You may need to add a splash of vegetable broth or water if the soup has thickened too much during storage. Freshly grated vegan cheese can be added upon reheating for an extra touch of creaminess.

Customizing Your Vegan Lasagna Soup: Creative Variations
This vegan lasagna soup recipe is incredibly versatile, inviting you to personalize it to your taste preferences or whatever ingredients you have on hand. Here are some fantastic ways to make this cozy dish uniquely your own:
- Boost Your Veggies: Don’t hesitate to incorporate more nutrient-rich vegetables. Sauté sliced mushrooms along with the lentils, or stir in finely diced carrots and celery for added flavor and texture. Fresh spinach is another excellent addition, wilting beautifully into the hot soup just before serving.
- Herb Swaps: If you don’t have fresh parsley and basil, or prefer a different herb profile, feel free to use 1-2 tablespoons of Italian seasoning. This pre-blended spice mix offers a fantastic combination of all the essential Italian flavors. You could also experiment with oregano or a touch of rosemary for a different aromatic twist.
- Elevate Your Toppings: Beyond the suggested vegan cheese, consider a sprinkle of red pepper flakes for a subtle kick, or a dollop of store-bought vegan ricotta. Be mindful that many commercial vegan ricottas are cashew-based, so be cautious if you have nut allergies. Freshly chopped chives or a swirl of high-quality olive oil can also add a gourmet touch.
- Add More Plant-Based Protein: For an extra boost of protein and varied texture, stir in a can of drained and rinsed chickpeas along with the lentils. Their creamy texture and mild flavor complement the soup perfectly.
- Cheese-Free Option: If you prefer to skip the vegan cheese, you can still achieve a wonderful creamy texture and cheesy flavor. Drizzle a generous amount of cashew cream into your bowl. For an even more pronounced cheesy note, blend a little lemon juice and nutritional yeast into the cashew cream before adding it.

Description
This one pot vegan lasagna soup is made with lentils for an authentic lasagna soup flavor- it’s rich, creamy, and surprisingly easy (and made without tofu!). Ready in just 30 minutes, and you’ll be adding this delicious cozy soup recipe to your weeknight dinner rotation all winter long!
Ingredients
- 1 1/2 cups dried mixed lentils
- 1 onion, diced
- 5–6 garlic cloves, minced
- 1 tbsp olive oil
- 1 24-ounce jar tomato sauce
- 6–7 cups vegetable broth
- 1 14-ounce jar crushed tomatoes
- 1/4 cup tomato paste
- 1 tbsp dried parsley
- 1 tbsp nutritional yeast
- 1/4 cup fresh basil, chopped (or 1 tbsp dried basil)
- 1 package lasagna noodles*, broken into pieces
- 3 cups chopped kale
- 1/4 cup liquid vegan mozzarella, store bought or homemade
Instructions
- Prep: First, ensure the onion is diced and garlic cloves minced. You’ll need a medium pot for the lentils and a large pot for the soup.
- Cook the lentils: Bring 3 cups of water to a boil, then add the lentils. Reduce heat to a simmer, and cook covered for 4 minutes. Remove from heat, keeping the lid on for 2 minutes to finish cooking. Drain excess water and set aside.
- Saute the garlic & onion: In a large pot, heat olive oil over medium heat. Add minced garlic and sauté until aromatic and lightly golden. Add diced onion and continue cooking until translucent.
- Saute the lentils: Add the cooked lentils to the pot with the aromatics and sauté over medium-low heat for 2-3 minutes.
- Create the broth: Stir in the tomato sauce, vegetable broth, crushed tomatoes, tomato paste, dried parsley, nutritional yeast, and chopped basil. Bring the mixture to a boil.
- Cook the noodles: Once boiling, add the broken lasagna noodle pieces and stir well. Reduce heat to low, cover, and simmer for 10-15 minutes, or until noodles are al dente and the soup has thickened.
- Stir in the vegan cheese: Finally, pour in the liquid vegan cheese and kale. Stir to combine, then cover and cook for 5 minutes, or until the kale has wilted. For a thicker, more stew-like consistency, you can continue cooking for another 10 minutes.
- Serve and top: Ladle the hot vegan lasagna soup into bowls and top with more liquid vegan cheese or shredded vegan cheese. Enjoy immediately! (Optional: Use a culinary torch to melt the cheese topping).
- Storage: Store any leftovers in an airtight container in the fridge for up to 5 days.
