Reimagining a Classic: The Iconic Ice Cream Truck Treat Transformed into a Dairy-Free Cheesecake

Who doesn’t cherish memories of chasing down the ice cream truck for that iconic strawberry shortcake bar? The distinctive layers, the sweet strawberry coating, and that satisfying crunch – it was pure summer joy. Now, imagine all those cherished flavors and textures, but enhanced and transformed into a luxurious, smooth, and utterly decadent cheesecake. This vegan no-bake strawberry crunch cheesecake is precisely that: a superior version of your childhood favorite, completely free from dairy and packed with an incredible depth of flavor.

Forget the icy texture of an ice cream bar; this cheesecake delivers an unparalleled creaminess that melts in your mouth. Each bite offers a harmonious blend of a firm, golden cookie crust, a velvety vanilla bean and strawberry cheesecake filling, and the delightful crispness of the strawberry cookie crunch. It’s a sensory experience that’s truly better than any ice cream bar you’ve ever had. This recipe isn’t just about recreating a classic; it’s about perfecting it. The delightful success of this recipe even inspired me to create another ice cream truck favorite in cheesecake form: the No-Bake Choco Taco Cheesecake, proving that nostalgic flavors can always be elevated!

Just like my popular No-Bake Biscoff Cheesecake and No-Bake Chocolate Cheesecake, this dessert is designed for ease. The entire preparation process, from start to finish, takes about 20 minutes of active time. After that, it’s just a matter of chilling to perfection, requiring no oven time whatsoever. And the best part? It’s entirely dairy-free and vegan, yet so rich and satisfying that even the most discerning palates won’t detect the difference. Get ready to surprise and delight everyone with this incredible dessert!

Deconstructing Deliciousness: The Core Components of This Strawberry Crunch Cheesecake

Every layer of this vegan no-bake strawberry crunch cheesecake is designed to contribute to a symphony of flavors and textures, ensuring an unforgettable dessert experience. Here’s a closer look at what makes this cheesecake truly special:

  • The Golden Cookie Crust: The foundation of our cheesecake is a wonderfully crunchy and sweet golden cookie crust. We achieve this by blending simple vegan vanilla wafer cookies with melted vegan butter in a food processor. While golden Oreos (which are surprisingly vegan!) or even vegan graham crackers can be used, we highly recommend sticking to the golden cookies for that authentic strawberry crunch ice cream bar flavor. The rich, buttery notes and crisp texture of the golden cookies perfectly complement the creamy filling, creating an ideal base that holds its shape beautifully.
  • Velvety Vanilla Bean Cheesecake Batter: This is the heart of our cheesecake, a lusciously smooth vanilla bean filling that forms the first layer. Unlike traditional baked cheesecakes, this no-bake recipe features carefully adjusted ingredient ratios to ensure the batter sets perfectly at a cooler temperature, resulting in a thick, stable, and incredibly creamy texture. Infused with pure vanilla extract and fragrant vanilla bean paste, this layer offers a classic, comforting sweetness that provides a perfect counterpoint to the vibrant strawberry flavors.
  • Fresh Strawberry Cheesecake Batter: To achieve a stunning natural pink hue and an intense fruity flavor, we incorporate both fresh and freeze-dried strawberries into the second layer of our cheesecake batter. The fresh strawberries provide a juicy, natural sweetness, while the freeze-dried strawberries concentrate that flavor, delivering a powerful burst of strawberry goodness. The combination creates a beautifully balanced and aromatic strawberry cheesecake layer that will captivate any strawberry lover. If you adore all things strawberry and cheesecake, you’ll also fall head over heels for my Vegan Strawberry Cheesecake Cookies!
  • Irresistible Strawberry Cookie Crunch Topping: No strawberry crunch cheesecake would be complete without its signature topping! We recreate this iconic element by taking more vanilla cookies, blending them with a generous amount of freeze-dried strawberries, and binding it all with a touch of melted vegan butter. This creates a vibrant, crumbly, and wonderfully textured topping that adds that essential crunch and a concentrated strawberry flavor, mimicking the classic ice cream bar’s delightful exterior.

Mastering Dairy-Free: The Secrets to a Perfectly Vegan No-Bake Cheesecake

Creating a dairy-free no-bake cheesecake that tastes just as rich and creamy as its traditional counterpart is simpler than you might imagine, especially when building on the foundation of my popular 7-ingredient no-bake vegan cheesecake bars. The key lies in selecting the right plant-based alternatives that mimic the texture and flavor of dairy ingredients perfectly. Here’s a detailed guide to the dairy-free heroes of this recipe:

Dairy-Free Cream Cheese: The Foundation of Creaminess
The choice of vegan cream cheese is paramount for a truly spectacular cheesecake. While many brands exist, not all are created equal for this specific application. For the best results, I highly recommend Kite Hill (note: contains nuts), Nature’s Fynd, or Tofutti (note: contains soy). These brands offer a superior tang and creaminess that is essential for a classic cheesecake flavor. I find that Violife can be acceptable, but it often lacks the robust flavor needed for a truly exceptional vegan cheesecake. Miyoko’s Kitchen, while fantastic for many dairy-free applications (especially their butter!), doesn’t quite capture the distinct taste of cream cheese for this recipe, so I generally avoid it here. For those who love a challenge or prefer to know exactly what goes into their food, you can even make your own vegan cream cheese using my dedicated recipe!

Dairy-Free Butter: For Richness and Structure
Just like in traditional baking, butter plays a crucial role in both the crust and the crunch topping, providing richness and helping with structure. My top pick for vegan butter is Miyoko’s Kitchen Cultured Vegan Butter, which delivers an incredibly authentic buttery flavor and texture (contains nuts). Plant Crock is another excellent and widely available option. I typically advise against using Earth Balance for cheesecakes, as I find its flavor can sometimes taste overly processed or less like real butter, which can subtly impact the overall delicate flavor profile of the cheesecake.

Vegan Heavy Cream: Achieving the Dreamy Texture
Heavy cream is vital for achieving the airy, yet rich and decadent texture of cheesecake. You have a couple of fantastic options here. My homemade cashew cream recipe is a phenomenal choice, offering incredible richness and a smooth consistency. For convenience, store-bought vegan heavy creams from brands like Silk or Plant Crock work beautifully. Califia Farms also offers a good alternative. It’s generally best to avoid coconut milk or coconut cream in this recipe unless you specifically desire a prominent coconut flavor, as it can overpower the delicate strawberry and vanilla notes.

Dairy-Free Yogurt: Adding Tang and Depth
A touch of dairy-free yogurt contributes a subtle tang and an additional layer of creaminess, enhancing the classic cheesecake profile. Forager Project Cashewgurt (contains cashews) is my absolute favorite for its rich texture and balanced flavor. Other excellent choices include Kite Hill, Tofutti’s dairy-free sour cream (which functions similarly to yogurt in this recipe), or any high-quality soy milk yogurt. Ensure the yogurt is plain and unsweetened to control the overall sweetness of the cheesecake.

By thoughtfully choosing these high-quality dairy-free ingredients, you’ll create a vegan no-bake strawberry crunch cheesecake that not only meets but exceeds expectations, proving that plant-based desserts can be utterly spectacular!

Crafting Perfection: Overview of How to Make and Assemble Your Vegan Strawberry Crunch Cheesecake

Making this vegan no-bake strawberry crunch cheesecake is a straightforward process, designed for maximum flavor with minimal effort. While there are a few distinct steps, each one is incredibly simple, making this recipe approachable for even novice dessert makers. The best part? You won’t need a stand mixer or any complicated gadgets – just a trusty food processor and your cheesecake springform pan to get the job done!

The entire active preparation and assembly phase took me just about 20 minutes from start to finish. After that quick prep, the cheesecake simply needs time to chill in the freezer for 5-7 hours, or ideally, overnight, to achieve that perfect firm, sliceable consistency. Once properly chilled, it’s ready to be gracefully released from the pan and adorned with fresh strawberries and vegan whipped cream, if desired. This dessert is designed to be a showstopper with minimal fuss!

Embracing Inclusivity: Is There a Gluten-Free Option?

Absolutely! This recipe is incredibly adaptable for those following a gluten-free diet, ensuring that everyone can enjoy this delightful treat. The only component that needs a gluten-free conversion is the cookie base and topping, as all other ingredients in the cheesecake filling are naturally gluten-free.

To keep the iconic flavor profile intact, your easiest option is to use store-bought gluten-free golden Oreos in place of the regular vanilla wafers. Many popular brands now offer delicious gluten-free versions that will perfectly replicate the sweet, buttery notes required for both the crust and the crunchy topping. Alternatively, you can seek out specific gluten-free vegan vanilla wafers if they are available in your area.

For those who love to bake from scratch and have a little extra time, you could even make your own gluten-free cookies for the crust and topping. My Easy Vegan Shortbread Cookie recipe can be made gluten-free by simply substituting a good quality 1:1 gluten-free baking flour blend. This approach offers a truly homemade touch, though it does add a baking step to an otherwise no-bake recipe. Whichever option you choose, rest assured that a delicious gluten-free vegan strawberry crunch cheesecake is well within reach!

Description

This no bake strawberry crunch cheesecake has a golden cookie crust, fresh vanilla bean and dairy free strawberry cheesecake batter, and strawberry cookie crunch on top! It’s like the ice cream truck classic- but honestly way better. And so easy!

Ingredients

Scale

Strawberry crunch topping:

  • 1 package  (23 g) freeze dried strawberries
  • 36 cookies (150 g) Nilla wafers
  • 1/4 cup (55 g) vegan butter, melted

Crust:

  • 1 package (250 g) vegan Nilla wafers*
  • 85 g vegan butter, melted

Vanilla cheesecake base:

  • 32 ounces vegan cream cheese, softened
  • 1 cup (240 mL) vegan heavy cream or cashew cream
  • 1 cup (200 g) granulated sugar
  • 1/2 cup (120 g) plain dairy-free yogurt
  • 1 tbsp pure vanilla extract
  • 2 tsp vanilla bean paste
  • 1 cup (240 g) hulled fresh strawberries, pureed
  • 1 package (23 g) freeze dried strawberries

Toppings:

  • Vegan whipped cream
  • Fresh strawberries, sliced
  • Vanilla sandwich cookies (optional, for garnish)

Instructions

  1. Prepare the Pan: Begin by lining a 9-inch springform pan with parchment paper. This includes pressing a circle of parchment into the base and strips around the inner walls of the pan. This step is crucial for easy removal of your finished cheesecake.
  2. Craft the Strawberry Crunch Topping: In a food processor, combine the freeze-dried strawberries (from the topping section), the vanilla wafer cookies, and the melted vegan butter. Pulse until the mixture forms a wet, crumbly texture. Transfer this fragrant strawberry crunch into a separate bowl and set it aside; this will be sprinkled on top later.
  3. Assemble the Golden Cookie Crust: Next, without cleaning the food processor, add the vegan Nilla wafers and the remaining melted vegan butter for the crust. Pulse again until you achieve a moist, sandy consistency that clumps together when pressed. Pour these crumbs into your prepared springform pan. Use the back of a spoon or your fingers to firmly press the crust evenly into the base of the pan. For a more dramatic look, you can also press some of the crust up the sides of the pan, or simply keep it as a flat bottom layer. Place the pan in the freezer to chill while you prepare the filling.
  4. Create the Vanilla Cheesecake Base: In the food processor, combine the softened vegan cream cheese, vegan heavy cream (or cashew cream), granulated sugar, dairy-free yogurt, vanilla extract, and vanilla bean paste. Blend these ingredients until the mixture is completely smooth and silky. You may need to pause occasionally and scrape down the sides of the food processor bowl with a spatula to ensure everything is thoroughly incorporated.
  5. Lay the First Filling Layer: Retrieve the chilled crust from the freezer. Carefully pour half of the velvety vanilla cheesecake batter over the crust. Using an offset spatula or the back of a spoon, gently spread the batter evenly to the edges of the crust. Set this aside to begin preparing the vibrant strawberry layer.
  6. Prepare the Strawberry Cheesecake Filling: Add the hulled fresh strawberries and the freeze-dried strawberries (from the cheesecake batter section) directly into the food processor with the remaining vanilla cheesecake batter. Blend until the mixture is perfectly smooth and has a beautiful, consistent pink hue.
  7. Final Assembly: Pour the strawberry cheesecake batter on top of the vanilla layer in the springform pan. Gently spread it out to cover the vanilla layer evenly. Now, take your reserved strawberry crunch topping and sprinkle it generously and uniformly over the entire surface of the strawberry cheesecake layer.
  8. Chill to Perfection: Transfer the assembled cheesecake back into the freezer. Allow it to chill for a minimum of 4-6 hours, or ideally, overnight. Adequate chilling time is essential for the cheesecake to set completely and achieve its firm, sliceable texture.
  9. Serve and Store: Once thoroughly chilled and firm, carefully remove the cheesecake from the springform pan. For an extra touch of elegance and flavor, top with fresh sliced strawberries and a dollop of vegan whipped cream, if desired. Slice and enjoy your magnificent creation! Store any leftover cheesecake in an airtight container in the refrigerator for up to 4 days, or in the freezer for up to 3 months for a long-lasting treat.

Notes

For Gluten-Free: To make this delightful cheesecake gluten-free, simply swap out the regular Nilla wafers for certified gluten-free alternatives. You can easily find gluten-free golden Oreos or gluten-free vanilla wafers in most well-stocked grocery stores. Another excellent option is to use homemade gluten-free vegan graham crackers for the crust and topping, adding a unique twist to the flavor profile.
