Discover the Magic of This Strawberry Tiramisu
This strawberry tiramisu recipe stands out as my ultimate make-ahead chilled dessert for the warmer months, and I’m thrilled to share why it will capture your heart too. We begin with an abundance of fresh, ripe strawberries, which are then roasted to perfection. This roasting process isn’t just a step; it’s a transformation. It concentrates their natural sugars, creating an intensely sweet and incredibly juicy strawberry sauce. This luscious syrup, brimming with tender sliced strawberries, then becomes the heart of our homemade ladyfingers, infusing them with an unparalleled fruity depth.
And yes, we are indeed making homemade ladyfingers – but don’t let that deter you! This is, without a doubt, the easiest ladyfinger recipe you’ll ever encounter. It’s completely vegan, meaning it’s entirely eggless and dairy-free, yet it achieves that perfect delicate texture and rich flavor. In fact, this very recipe forms the foundation of my highly-rated vegan tiramisu, a recipe inspired by my Italian great-grandpa’s classic approach, proving that you don’t need traditional ingredients to achieve authentic Italian dessert excellence.

Let’s delve into the exquisite flavor profile: traditional tiramisu is renowned for its rich blend of coffee, sometimes a hint of liqueur, and cocoa powder, all beautifully complementing the creamy mascarpone. Our strawberry tiramisu respectfully nods to these classic elements while reinventing them for a lighter, fresher summer dessert with a delightful fruity twist. Much like my popular vegan banana pudding tiramisu, this recipe offers a refreshing departure from the conventional.
Imagine the lush, velvety texture of our dairy-free mascarpone cream, perfectly balanced with the intense sweetness of roasted strawberries. Beneath these layers, a vanilla “buttery” biscuit-like ladyfinger awaits, thoroughly soaked in an aromatic strawberry milk. That’s right – no coffee and no alcohol in this rendition, allowing the pure, vibrant strawberry flavor to shine through. It’s truly a heavenly experience, promising to be a highlight of your dessert repertoire.
The best part? This entire recipe is ingeniously crafted to be undetectably eggless and dairy-free. You’ll be amazed that this is a vegan strawberry tiramisu! There are no egg yolks in our luxurious mascarpone cream, which is entirely dairy-free thanks to my award-winning homemade vegan mascarpone recipe. Even our delicate ladyfingers are lovingly made without any eggs. This thoughtful composition ensures that everyone can indulge in this delightful Italian dessert without compromise.
Furthermore, we’ve designed this strawberry tiramisu recipe to be served in charming mini individual cups. This presentation makes for the cutest, perfectly portioned chilled Italian dessert, ideal for gatherings, picnics, or simply a sweet moment to yourself this summer.

Essential Components for the Perfect Vegan Strawberry Tiramisu
Crafting this incredible vegan strawberry tiramisu is a delightful process, thanks to its four key components, each playing a crucial role in creating a harmonious and utterly delicious dessert:
- Effortless Eggless Ladyfingers: Don’t be intimidated by homemade ladyfingers! This recipe demystifies the process, making them surprisingly easy to bake. What’s even better is that their vegan nature is virtually undetectable. My 82-year-old grandmother, the daughter of my great-grandpa who inspired my original tiramisu, was astounded. She confessed she would never have known they were vegan if I hadn’t revealed the secret! These light, airy biscuits are the perfect vehicle for soaking up our flavorful strawberry milk.
- Velvety Dairy-Free Mascarpone Cream: The heart of any tiramisu is its rich, creamy mascarpone. For our vegan version, we’ve developed a simple yet incredibly effective method to create a dairy-free mascarpone cheese that rivals its traditional counterpart. It’s light, luxuriously creamy, wonderfully refreshing, and infused with a sweet, buttery vanilla essence. This homemade vegan mascarpone truly elevates the dessert, providing that signature richness without any dairy.
- The Magic of Roasted Strawberries: This is arguably my favorite part of the recipe and what truly sets this strawberry tiramisu apart. Roasting the fresh strawberries caramelizes their natural sugars, intensifying their sweetness and creating a deeply flavorful, juicy component. The process is remarkably simple but yields an incredibly rich and tender texture that enhances the entire dessert, allowing the fruit’s essence to truly shine. The juices released during roasting further permeate the ladyfingers, adding an extra layer of flavor.
- Fresh Vegan Whipped Cream: To complete this masterpiece, we crown it with a generous dollop of fresh vegan whipped cream. The quality of vegan whipping creams available today is truly remarkable. I highly recommend brands like Califia, Silk, or Plant Crock for their excellent texture and flavor. Alternatively, you can achieve fantastic results with chilled coconut cream. For a final flourish, we dust the whipped cream with a delicate sprinkle of powdered freeze-dried strawberries, adding a pop of color and an extra burst of concentrated strawberry flavor, reminiscent of what we use in my delectable strawberry buttercream frosting – a perfect topping for my vegan strawberry cake!

Is This Strawberry Tiramisu Truly Vegan?
Absolutely! This roasted strawberry tiramisu is proudly and naturally vegan. By intentionally omitting eggs and exclusively using high-quality dairy-free ingredients, you can confidently enjoy this exquisite dessert knowing it aligns with a vegan lifestyle. In fact, every recipe on this site, including my classic tiramisu, is thoughtfully developed to be vegan-friendly.
For those who may not require a dairy-free option but wish to make an eggless tiramisu, some readers have found success by substituting traditional dairy products, such as classic mascarpone cheese, into certain components. However, please note that I have not personally tested these variations, as my focus and expertise lie in creating delicious vegan recipes. Therefore, I cannot fully guarantee the results of such substitutions, though the core concept of eggless ladyfingers remains versatile.

Expert Tips for a Flawless Strawberry Tiramisu
Achieving the perfect roasted strawberry tiramisu is easier than you think with these expert tips:
- Embrace the Make-Ahead Magic: To truly maximize flavor and ease your preparation process, I highly recommend making both the ladyfingers and the dairy-free mascarpone cream the day before you plan to assemble and serve your tiramisu. Ladyfingers, like many baked goods, often develop a richer texture and absorb liquids more effectively when they’re a day old. This strategy will alleviate pressure on the day of assembly, allowing you to focus on the layering and final touches, ultimately leading to a more flavorful and relaxed baking experience.
- Customizing the Liquid Soak – No Alcohol, No Coffee, No Problem! Our recipe intentionally excludes alcohol and coffee to highlight the pure strawberry essence, making it suitable for all ages and preferences. However, if you’re looking to introduce a subtle complexity, consider steeping a strawberry-flavored tea in hot dairy-free milk for an aromatic twist. For those who enjoy a touch of liqueur, a splash of amaretto or a berry-flavored liqueur would beautifully complement the strawberry notes.
- Why Roasted Strawberries are a Game-Changer: While using fresh strawberries is certainly an option, roasting them truly elevates this dessert. The high heat coaxes out and caramelizes the natural sugars within the fruit, intensifying their sweetness and creating a depth of flavor that fresh berries simply can’t achieve. The strawberries become wonderfully soft and juicy, releasing a flavorful syrup that further infuses into the ladyfingers. This process yields a richer, more nuanced strawberry flavor that is simply irresistible.
- Berry Good Alternatives: Don’t feel limited to strawberries! This recipe is incredibly versatile. If you’re eager to try a different fruit, you can absolutely swap in fresh blueberries, blackberries, or raspberries for every strawberry component – from the roasted fruit layer to the freeze-dried powder topping. Just ensure the berries are ripe and sweet for the best results.
- A Hint of Chocolate for Traditionalists: If you miss the classic cocoa element of traditional tiramisu, or simply adore the chocolate-strawberry pairing, feel free to substitute cocoa powder for the freeze-dried strawberry powder as a delightful topping. A light dusting of cocoa adds a touch of bittersweet richness that beautifully contrasts with the sweet fruit.
Can I Make This Strawberry Tiramisu Gluten-Free?
Absolutely! This recipe is incredibly adaptable for those seeking a gluten-free option. The homemade vegan ladyfingers recipe, which forms the base of this tiramisu, already includes a fantastic gluten-free alternative. I’ve personally tested them using King Arthur Measure for Measure gluten-free flour, and those are actually the very cookies featured in some of the photos here. You’ll find them virtually indistinguishable in both look and delicate texture from their all-purpose flour counterparts!
In my dedicated vegan ladyfingers post, I elaborate further on this gluten-free success, demonstrating how easy it is to achieve perfect results. So, go ahead and confidently swap in your preferred 1-to-1 gluten-free baking flour blend (ensure it contains xanthan gum or add a teaspoon of arrowroot powder if it doesn’t) to enjoy a truly inclusive and delicious strawberry tiramisu!
Serving Options: Single Cups or a Classic Dessert Pan?
While our recipe features charming single-serving tiramisu cups, offering a delightful presentation and perfect portion control, you are absolutely not limited to this format! Yes, you can most certainly make this roasted strawberry tiramisu as a full-sized dessert in a traditional pan.
If you opt for a larger tiramisu, you can even pipe the ladyfingers into their classic elongated shape, just as you would for a conventional tiramisu. To scale the recipe appropriately for a larger format, you’ll need to double all the ingredients listed. A standard 8×8 inch (20×20 cm) baking dish is ideal for assembling a full-sized strawberry tiramisu, allowing for beautiful layers and easy serving for a crowd. The chilling time will remain similar, ensuring the flavors meld perfectly.

Make Ahead and Storage Solutions
This roasted strawberry tiramisu is an excellent candidate for making ahead, which often allows the flavors to deepen and meld beautifully. I highly recommend preparing the homemade ladyfingers and the dairy-free mascarpone cream a day in advance of when you plan to assemble the tiramisu. This separation of tasks makes the entire process more relaxed and enjoyable.
For ultimate convenience, you can even assemble the entire tiramisu (or the individual cups) a day before serving. Just ensure it is properly covered with plastic wrap and refrigerated. This strawberry tiramisu maintains its optimal freshness and deliciousness for up to 3 days when stored in an airtight container in the refrigerator. The vibrant flavors and creamy textures will be perfectly preserved for your enjoyment!

Description
This roasted strawberry tiramisu is layered with the easiest homemade eggless ladyfingers soaked in a dairy-free strawberry milk, roasted strawberries, dairy-free mascarpone cream, and fresh dairy-free whipped cream! This twist on the classic Italian dessert is the best way to use up ripe strawberries!
Ingredients
Scale
Eggless Ladyfingers:
- 1 cup (125 grams) all-purpose flour or sifted gluten-free 1-to-1 baking flour (if doing gluten-free, add in 1 tsp arrowroot powder)
- 1 tbsp (10 g) cornstarch or arrowroot starch
- 1/2 tbsp baking powder
- 1/4 tsp baking soda
- 1/4 cup (60 mL) aquafaba/chickpea brine
- 1/3 cup (75 g) granulated sugar, divided
- 1/2 tsp cream of tartar
- 2 tbsp dairy-free yogurt or unsweetened applesauce, room temperature
- 1 tbsp melted vegan butter or avocado oil, room temperature
- 1/2 tbsp pure vanilla extract
- 1/8 tsp almond extract
Strawberry Milk:
- 1 cup (240 mL) dairy-free milk, such as oat milk, soy milk, or almond milk
- 1 ounce bag freeze-dried strawberries, divided
- 1 tbsp maple syrup
Vegan Mascarpone Cream:
- 1 batch vegan mascarpone
- 1/3 cup (67 g) vegan butter, room temperature
- 1 cup (140 g) powdered sugar, sifted
- 1 tsp vanilla extract
Roasted Strawberries:
- 1 pint fresh strawberries, washed and sliced
- 3 tbsp lemon juice (about 1 lemon)
- 3 tbsp maple syrup
- 1 tsp vanilla extract
Vegan Whipped Cream:
- 1/2 cup (120 mL) vegan heavy cream, cold
- 2 tbsp granulated sugar
Instructions
- Tip: I highly recommend making the ladyfingers and the mascarpone a full day before you plan to assemble the tiramisu. While everything can be prepared on the same day, ladyfingers are truly at their best when they’ve had a day to rest, allowing them to absorb the strawberry milk more effectively, resulting in a significantly more flavorful strawberry tiramisu!
- Prep: Begin by making the eggless ladyfingers according to their specific instructions. For this recipe, I found it convenient to pipe them into small, round cookies, approximately 1 inch in size, perfectly suited for individual cups. This process should yield about 16-20 biscuit-like cookies. Concurrently, prepare your vegan mascarpone following its recipe. Once the mascarpone has thoroughly cooled and firmed up, you are ready to begin the assembly phase of your tiramisu.
- Roast the Strawberries: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper for easy cleanup. In a medium bowl, gently toss the freshly sliced strawberries with the lemon juice, maple syrup, and vanilla extract until they are evenly coated. Spread the strawberries in a single layer onto the prepared baking sheet. Roast them in the preheated oven for approximately 15 minutes, or until they are tender and have released their luscious juices. Once roasted, remove them from the oven, allow them to cool for about 5 minutes, then transfer them back to the bowl, reserving all the flavorful juices. Set aside.
- Make the Strawberry Milk: In a food processor or high-speed blender, blitz the freeze-dried strawberries until they form a fine, vibrant powder. Carefully remove about 1/3 cup of this strawberry powder and set it aside; this will be used for dusting the top of our tiramisu later. Return the remaining strawberry powder to the food processor. Add your chosen dairy-free milk and the maple syrup, then blend for about 30 seconds until the mixture is smooth and well combined. Pour this aromatic strawberry milk into a shallow bowl, making it ready for dipping the ladyfingers.
- Make the Mascarpone Cream: In a medium-sized bowl, use a hand mixer to cream together the room-temperature vegan butter and the prepared vegan mascarpone until the mixture is light and creamy, which typically takes about 2-3 minutes. Next, add in the sifted powdered sugar and vanilla extract. Mix again on a low speed until all ingredients are just combined and no clumps of powdered sugar remain, ensuring a smooth, velvety cream. Be careful not to overmix.
- Assemble the Tiramisu Cups: Gather 3-4 small dessert cups or jars for your individual tiramisu servings. Take one ladyfinger cookie and briefly dip it into the strawberry milk mixture, ensuring it’s moistened but not soggy. Place this cookie at the bottom of a cup, and repeat with a second cookie, arranging them to cover the base. Spoon approximately 1/4 cup of the roasted strawberries (including their delicious juices) over the ladyfingers, followed by about 1/4 cup to 1/3 cup of the mascarpone cream. Repeat this layering process with another layer of soaked cookies, roasted strawberries, and mascarpone cream. Continue this full process for the remaining tiramisu cups until all ingredients are used.
- Chill: Once all your tiramisu cups are assembled, cover each one tightly with a piece of plastic wrap. Place them into the refrigerator to chill for a minimum of 1-2 hours. This crucial chilling time allows the flavors to meld beautifully and the tiramisu to set, creating that perfect creamy texture.
- When Ready to Serve: Just before serving, prepare the vegan whipped cream. In a large mixing bowl, using either a hand mixer or a stand mixer fitted with a whisk attachment, begin whipping the cold vegan heavy cream on high speed. Continue mixing until firm peaks start to form, which usually takes about 1-2 minutes. While the mixer is still running, gradually add in the 2 tablespoons of granulated sugar, and continue whipping until the cream is light, airy, and holds its shape.
- Top and Enjoy! Generously spoon or pipe the freshly made vegan whipped cream on top of each chilled tiramisu cup. For the final touch, dust the whipped cream with the reserved strawberry powder, adding a beautiful color and intensified strawberry aroma. Serve your roasted strawberry tiramisu immediately while cold and savor every delightful spoonful!

Notes
For a full-sized vegan strawberry tiramisu: If you prefer to make a larger, pan-style tiramisu, please refer to the dedicated section in the blog post above for detailed notes on how to adapt the homemade vegan ladyfingers, as well as the recommended quantities for scaling each component to fit an 8×8 inch baking dish.
Gluten-Free Option: To make this recipe completely gluten-free, simply swap the all-purpose flour in the ladyfingers recipe with a high-quality 1:1 gluten-free flour blend. I’ve had fantastic success using King Arthur Measure for Measure Gluten-Free Flour, which yields ladyfingers with an identical texture and flavor to their gluten-containing counterparts.
